Tofu Lasagna

I give 4 stars because of my modifications. I sauted minced onion, carrot, bell pepper and garlic which I added to the tofu mixture, as well as one pack of spinach. I used 1/2 jar sauce in mixture and the rest for my layers. I omited the milk and used no boil noodles. I made 3 layers, each time adding sauce to the top of the cheese. I coated the bottom of the pan with sauce first. I cooked 40 min covered and then 5 min uncovered. WOW! turned out yummy!! I don't think the kids will be excited with the spinach, but its good for them, right! Turned out being a cross between a lasagna and a quiche. Tofu....what tofu....no one will know the difference! This is one you can really play with.

Fried Rice Restaurant Style

This is a great base recipe. I add 1 clove crushed garlic after the peas and carrots and just a pinch of sesame oil (goes a long way) I use basmati rice which is less sticky (works well hot, no need to cool) and i add bean sprouts at the end. Kids love it!

Cocktail Meatballs

These are good but not the best. I am still trying to find the perfect meatball recipe. My guests liked them however. The thought of the cranberry doesnt set right with me.

Sweet, Sticky and Spicy Chicken

This chicken was a big hit! Really simple and versatile. I added red pepper, broccoli and mushrooms. My kids loved it! (Though I did pick out the mushrooms) To me thats all that counts. Me well I love anything! LOL Thanks

Delicious Rosemary Bread

WOW!!! Who knew making bread was this simple!! I just finished making mine and had to rate it right away. It was so good! I added all the rosemary into the bread giving it a chop. Then I added full sprigs to the top. I would recommend placing the loaves on seperate baking sheets while on the second rise. I covered mine with a large bowl, allowing it plenty of room to rise. Even my 2 y/o is munching away!

Flourless Peanut Butter Cookies

Great base recipe! I needed to tweak it alittle. Used 3/4 cup white sugar, 1/4 cup brown sugar, tab vanilla, and 1/8 tea baking powder. Bake time took about 10 min. made about 20 cookies. I added chocolate chips to second batch. They were gone by the morning!! Yummm!!

Best Egg Rolls

Hm....not convinced this is the best egg roll recipe. I added extra garlic powder, ginger, salt and pepper. The filling still tasted bland. Also added alittle green onion and soy sauce. Worst of all the inside of the wrap was not cooked through. I had to finish in the oven. The only upside is the family enjoyed filling and rolling. This recipe is an ok base but needs tweaking!

Authentic Mexican Tortillas

These came out tasting like baking powder! I called my Mexican mother-in-law and she told me to use only a pinch of baking powder and a pinch of salt. Also alittle more shortening (about a half cup to each cup of flour). She said the dough doesn't need to rest either. Make sure to roll out almost to the point of breakage (paper thin),they should be rolled out a bit oversized as they will shrink when cooked. They only need about 30 secs. each side then place in a large ziplock and reheat another 30 sec. when ready to eat. These were so authentic! Not the healthiest but a good change from store bought!

Avocado, Tomato and Mango Salsa

I just made this salsa. It was so good! I used 2 avoc. and only 1 tom. and added one cucumber seeded, left out the olive oil and used to limes. All my hispanic friends couldn't stop talking about it! (used my vidalia small dice)

Kickin' Collard Greens

Very good! I transfer mine after the 45 min to the slow cooker on low for an additional couple hours. This softens them up and soakes up all the flavor. YUM!!

Adrienne's Cucumber Salad

Very good, minus the onion and dill, added some pepper. Ratio like others advised, 1 cuc, 1/2 c vin, 1/8 c sugar, 1/4 c water and some salt. Stayed crunchy the next day. Next time I will make more!

Carrot Cupcakes with White Chocolate Cream Cheese Icing

Yum! These were so moist and tasty! I didn't have vanilla and I omited the ginger, I also skipped the frosting (plenty of calories as is :) I used the silicone muffin pan. I think it makes a big difference in the overall turnout. My family ate these up in one night!!
