Fortune Cookies I

Okay.... I am PICKY! I wanted the perfect recipe and this is IT. I scaled the recipe up to 96 servings since I was wanting to make them for friend's kids for Valentine's Day. The ONLY thing I changed was adding water so that the consistency was *much* thinner. I did figure out some tips that make it much easier! HERE IS WHAT WORKED AWESOME :: USE A LARGE ELECTRIC GRIDDLE ON 225. Take non-stick foil and score 8 - 3" diameter circles on the non-stick side and place it on the griddle. Spray it lightly with oil. Put the thinned out batter into a squeeze bottle (the kind that are sold with icing supplies) and trace the first circle with batter and then do a large blob in the middle and then fill in the circle and move quickly to the next one..... allow the 8 circles (or fewer) to cook but NOT too long.... I found it worked better to flip them BEFORE they got light brown. And WHEN YOU TURN THEM.... flip the entire piece of foil over and I used a hand towel to rub each circle. Allow them to cook about 2 minutes and MAKE SURE to use a spatula to gently ease the small "pancake" off that you made first. Work quickly to put it on the counter, place the fortune in and use the spatula to fold in half and then use a coffee mug with a thicker edge to do the last fold - I had to use a tea towel to keep from burning my fingers! (NOTE:: one last thing I did do was add almond flavoring and a few drops of yellow food coloring and one of red to get an authentic color) PERFECTION!

Not sure about amount of syrup used for making creamer..... start with 2-1/2 cups and up to 4 cups mixed with box of heavy cream + low fat milk.

New England Clam Chowder I

this is my go to recipe! I follow it pretty much EXACTLY except that i drain the clams and use ALL of the juice. I also sauteed the bacon... then added the onion... then added 1/4 cup flour so that it would thicken the soup. then I added the clam juice and boiled the potatoes till they were tender. IT WAS PERFECT!

Kaese Spaetzle

I was NERVOUS to make this since we had just spent time in Germany and my kids' expectations were high! But... the recipe did not disappoint! I did have to scale up the recipe in order to use it as a main dish. I also used 1/2 tsp of nutmeg instead of 1 full one. Making the spaetzle was FUN!

Chocolate Butter-Creme Frosting

Tripled this recipe as suggested and added 1/2 vanilla and 1/2 raspberry flavoring and it was DIVINE! Was perfect to frost a 2 layer cake. Topped it with fresh raspberries... YUM!

Spinach Tortellini Soup

I'm all for easy and quick! I usually a "add a little bit of this and that" kind of cook. It's rare that I don't switch stuff up with a recipe, but honestly -- this recipe is perfect as is! (I'm SERIOUS!) My kids even love it!

Chewy Peanut Butter Chocolate Chip Cookies

My 3 year old daughter and I made these using the suggested changes of 1 cup PB and lessening the flour to 2 cups. Instead of chocolate chips we used the Christmas M&Ms and reserved about 1/4 cup of them for her to put on the tops of each cookie. We also used a smaller cookie scoop (1 TBS?) to make the balls and then kinda flattened them with the spatula as they came out. They were fun to make together. I also froze half the dough in a roll to see how that would work out if I ever wanted to make them in large batches. The only drawback to this is that when you slice the cookies - you inevitably cut some of the M&Ms. (Also, if you use this method - you can wait till they soften a little on the pan and your kids can still add some M&Ms)

Hot Cocoa Mix

I also tweaked the recipe... made it in my FOOD PROCESSOR (love that thing!) Here is the winning combination: 4 cups dry milk, 2 cups of the Cinnamon Vanilla Coffee Mate, 1-1/4 unsweetened cocoa powder, 1-1/4 regular white sugar, and since it was a cinnamon flavor I did add 2 tsp of a really good cinnamon! VOILA! Perfect for hostess gifts or for our friends! We all enjoy it and I didn't find it too sweet this way!

Lemon Garlic Tilapia

Great baked fish recipe. Nothing super fantabulous, but really tasty! I did sub in dill for the parsley as I thought it'd be a good little twist. YUM! Served with steamed broccoli and a spiced up couscous which I made while waiting for the fish to bake.

The Whole Jar of Peanut Butter Cookies

.... these tasted *ok* but the texture was just off. It was quite crumbly. I have no idea how the rating got so high and I don't often give sub-par reviews, but I had high expectations due to the reviews. I'll keep looking for that perfect peanut butter cookie....

Overnight Caramel French Toast

Okay - not that I shouldn't have known from the ingredients... but this weas like eating a CANDY BAR for breakfast. I only had one piece and I seriously feel the need to drink a lot of water to try to counteract all the SUGAR first thing in the morning. I used regular bread since that's what I had on hand and it was soggy... eeeeewwwww! So after baking it for 45 minutes I then put it in a pan and fried it (no more butter, just sprayed the pan) and it gave it a nice crispy kind of texture. It was just not the greatest thing for breakfast... for sure the sugar on top is overkill - if you wanted to make this I would suggested leaving out the sprinkled sugar and just doing cinnamon. And then just eat VEGETABLES the rest of the day.

Andrea's Pasta Fagioli

This soup had me singin' in ITALIAN! OMGOSH it was soooo good and I'm not really one to rave over Pasta Fagioli! Really GREAT recipe! I only changed a few things... (which is big for me!) I chopped the onion ... I added 2 tsp of chicken bullion and a few dashes of salt too. I also added 1/2 tsp cumin and two parmesan rinds because it did seem like it needed a little something else. I didn't have the beans it called for on hand so I used one can of kidney and one can of black beans UNDRAINED... I didn't have the right pasta either so I used a tri-colored bow tie pasta which I DID NOT ADD RIGHT AWAY... I allowed the soup to simmer for an hour and 15 minutes - occasionally stirring it and I cooked the pasta separately so that it wouldn't get soggy with any leftovers. I just put in 1/2 cup of the pasta in the bottom of each bowl to serve and garnished with grated parmesan! Dang it was SOOO GOOD! Okay so... after typing this up it seems I did changes some things --- but let's just say I TRIED to keep to the recipe... oh yeah --- one more thing (I'm laughing now!) Instead of parsley - I always substitute cilantro.... I can't help myself. So... so much for not changing much! HA! Served with garlic bread - EVERYONE LOVED IT and most had seconds!
