Texas Caviar I

I just made this for a party and got raves reviews. I skipped the coriander and bell pepper, I took another reviewer's advice and used a small can of petite canned tomatoes. I only added about 2-3 oz of zesty Italian salad dressing and added the juice of one very juicy lime. I was sure to drain and rinse the beans before I used them so they were not too sticky. This one is a keeper for sure -easy and yummy!

Heavenly White Cake

Perfect flavor! Perfect cake! I did skip the almond essence because of allergies and use clear vanilla. I used it in an insulated pan and after baking the center fell by a tiny bit -but it was still perfect and moist and made me a rock star for my kids birthday. And FWIW -I made mine the week ahead and froze it. It was awesome.

Rick's Special Buttercream Frosting

Raspberry Lemon Loaf

I gave this 5 stars even though I modified it quite a bit -it was just light and wonderful and exactly what I was looking to take to a friends house as a thank-you gift. My changes: 2 full eggs (no extra whites) 1 cup full fat sour cream (plain) instead of yogurt 1 tbs lemon essence I used coconut oil -because I always bake with coconut oil And I added 0.25 cup (approx) milk to thin it out Doubled the sugar per other reviewers. I tore my raspberries in half to get more of that throughout I made it into mini loaves and they baked for about 40 mins. Once cooled I boiled 0.5c sugar with 0.3c fresh lemon juice for 5 mins and then brushed that on the top for an extra kick of tart and sweet when you bite in! YUM!!!

David's Mesquite Smoked Texas Brisket

This was excellent! We live in Texas and just got a nice grill and we were determined to conquer what Weber calls the Mt. Everest of Grilling -Brisket!! This was our second attempt and it was perfect!! Although we did make modifications - for a 5lb piece of meat we smoked for 2hrs and baked for 2hrs. We did most of the oven time at 275, except for the last 30 mins we did at 300. Also we didn't have greek seasoning so we used 2 tablespoons dried oregano 1 tablespoon dried rosemary 1 tablespoon dried onion 2 teaspoons granulated garlic 1 teaspoon dried lemon peel 1/2 tablespoon ground black pepper 1 tablespoon kosher salt And we used 2 cloves of garlic per pound, being sure to squash it release flavors. We plan on making this for my kids birthday party - easy way to feed a ton of people. Oh-one more thing -we got the meat from a butcher and not the grocer -it was a much better piece of meat.

Blueberry Crumb Bars

I made some changes but I love this recipe -I can't stop eating it!! This will be a favorite for sure!! Let's see - I used brown sugar in the crust, used half whole wheat flour and half white flour. I used half butter and half shortening. I also added the zest from a lemon to the crust, and I added an extra egg (because sometimes whole wheat substitutions need that). The next time I make it I might add 50% more lemon zest or some lemon essence to the egg. But all in all - Yum! Yum! Yum!!

Salad Dressing Cupcakes

This cupcake tastes waaay better than it should based on the effort. I agree with previous reviewers that said it is sooo much easier than a mix. I used a full-fat canola mayo for my salad dressing. I was suspicious when I added the mayo to the water, but once I added it to the dry ingredients -WOW! It was real cupcake batter! It isn't super sweet -which I like and it is the perfect size batch. Also, I was in a rush, so I wasn't as careful as I could have been with my measurements and it still came out really yummy!

Waffles II

Great recipe!! My husband is a huge waffle guy and he just loved these! I used coconut oil for th oil, I used half whole wheat flour and added about 1/4 c sugar and a splash of vanilla! Perfection!!

Ninety Minute Cinnamon Rolls

BEST. CINNAMON. ROLLS. EVER!!! WOW -these were just great! I did use fresh buttermilk that I had on hand and used 75% butter and 25% shortening. I baked them in a small glass baking pan and frosted them with some cream cheese frosting. These went super quickly at my house!

Soft Sugar Cookies IV

This was just an awesome recipe!! I don't know what I can say that hasn't already been said!!! I did make some modifications substituting 1 cup of whole wheat flour, adding a tad more baking powder and using raw sugar. They turned out great!! I did skip the part about rolling them in sugar, and I'm glad I did because I thought they were plenty sweet enough -or maybe that's just the raw sugar. I will try to use 1 cup butter and 1/3 cup shortening in my next batch.

Best Brownies

This recipe is fantastic!! And so easy and quick. I mix it all in my pot, so clean up is a cinch too. I melt the butter and then add the sugar in the pot. I remove it from the heat, add the dry ingredients and the vanilla and then add the eggs last. I mix it with a silicone spoon/spatula and the result is a perfect dense chewy brownie. I should add I have never made the frosting. When I made this the first time I had some left over chocolate glaze (Melted chocolate chips and butter in equal amounts and a small amt of corn syrup). I re-heated the glaze and spooned it over the top of the brownie while it was still hot and got that perfect glaze where you can't tell where the brownie ends and the frosting begins. The combination is deadly!

Whipped Cream Cream Cheese Frosting

This recipe was sensational. I made it for a birthday party and everyone raved about this frosting. Even my mother-in-law -who was trying to convince me that I should just mix the cream cheese with the icing sugar and go that route. I'm so glad I didn't. I did use about 1.5 cups of powdered sugar instead of regular sugar. I whipped the cream first and then stuck it in the freezer while I beat the cream cheese and powdered sugar. It was super easy to make and it tasted so great. I would make this as a fruit dip in the future.

Whole Wheat Banana Nut Bread

This is a great recipe -very easy and very yummy. You don't really know that it is whole wheat either. The bread is not too sweet and not too banana-ery. It has a bit of a cakey texture, but that seems to be imorving with time. Per one reviewer's suggestion, tried it with 1/4 cup honey and 1/4 cup Splenda and it turned out great. I will make this again for sure!

Wheat Germ Whole-Wheat Buttermilk Pancakes

This is a great recipe. The pancakes turned out nice and fluffy. I added about 1/4 cup of splenda and I think next time I will add some chopped pecans. The recipe has a great nutty taste and I will make it again for sure. My husband wasn't going to have any since they were whole wheat - but then he tasted mine and asked me to make a couple more for him!

Baked Bar-be-Que Chicken

I made this recipe for 30 people. It was easy and great. I sprinkled a bar-b-que rub on the chicken inseatd of garlic powder and I added some charcoal spice too. I used a doctored Tony Roma's Carolina Honey BBQ sauce (I doctored it adding some lite beer and coke). I will definately make this again. It got rave reviews and was so easy.

Mayonnaise Cookies

WOW! These are surprisingly good! I was looking for a super easy and quick cookie recipe to make with my twin 2.5 year olds and this one fit the bill because I knew I could make it in the window of their short attention span. But WOW! I added chocolate chips and skipped the final sugar sprinkle. I also used a really good all natural mayonnaise - with canola oil. YUM!! These were perfectly gooey and yummy with no hint of the mayo. I was nervous when I smelled the batter did smell so mayonnaise-ey. So after the first cookie sheet went in I heated up about 1/4c water in the microwave, added 2-3 tbs of cocoa powder to make a paste. I added that to the remaining cookie dough and YUM!!!! (they tasted like a brownie, but I had to work to mix it in -so they looked a bit ugly) But it was really Yummy before that and didn't need it!! ETA - I started making these cookies in a press cookie tin and that made it perfect -because the dough is a bit crumbly!

Perfect Chocolate Cake

Perfect flavor! Perfect cake! I always use parchment paper on the bottom of my choc cakes. I insulated the pans and they came out perfectly level and even layers. Rich flavor - I had just made a box cake that i doctored a few days before and this just blew it out of the water. I didn't use the frosting or filling. And FWIW -I made mine the week ahead and froze it. It was awesome.

Maple-Balsamic Vinaigrette

Loved this recipe. I adjusted the recipe a bit because I use it sparingly - I used a 1:1:2 ratio for the maple syrup, balsamic vinegar and oil respectively. Used this on my fav salad with greens, goat cheese and dates. Perfection!
