About this Cook
I am a Trinidadian that has lived in Jamaica and the US, so my cooking influences are wide and varied. I try to eat healthy - and by that I mean good fats and carbs. I am a new mom and and am trying to learn new recipes for my kids that are full of flavor and healthy too.
My favorite things to cook
My favorite things to cook are things with a TON of flavor. I also like dishes that I can leave alone, so I can spend time with my kids. Onions and garlic are in everything I cook.
My favorite family cooking traditions
Everything is better with some spice and limes!

Best Brownies
This recipe is fantastic!! And so easy and quick. I mix it all in my pot, so clean up is a cinch too. I melt the butter and then add the sugar in the pot. I remove it from the heat, add the dry ingredients and the vanilla and then add the eggs last. I mix it with a silicone spoon/spatula and the result is a perfect dense chewy brownie. I should add I have never made the frosting. When I made this the first time I had some left over chocolate glaze (Melted chocolate chips and butter in equal amounts and a small amt of corn syrup). I re-heated the glaze and spooned it over the top of the brownie while it was still hot and got that perfect glaze where you can't tell where the brownie ends and the frosting begins. The combination is deadly!

Steak Sauce
Like everyone here came to this because I was out of A-1. It was pretty good. I did check the ingredients on A-1 and found it included raisin puree and orange puree so I added some prune puree (1-2 tbs) and a bit of orange zest and it was awesome!

Perfect Chocolate Cake
Perfect flavor! Perfect cake! I always use parchment paper on the bottom of my choc cakes. I insulated the pans and they came out perfectly level and even layers. Rich flavor - I had just made a box cake that i doctored a few days before and this just blew it out of the water. I didn't use the frosting or filling. And FWIW -I made mine the week ahead and froze it. It was awesome.
