Baked Macaroni and Cheese I

Well I hate to be in the minority but I won't be making this one again. My husband is a purist and did not like the onions in his M&C. There is a floury taste which surprised me. Perhaps cornstarch would be a better thickener. This will not be made in our house again :-(

Greek Chicken Pasta

This was very good. Because of the mixed reviews I added the marinade from 1 jar of artichokes (I only used 1 jar) to add more flavor. Also used canned tomatoes since fresh are not in season. If you don't like tangy sauces then you won't like this one. Next time I'll add a bit of tomato paste to thicken the sauce. My husband and I really enjoyed this. I will make this again!

White Wine and Garlic Dream Cream

To truckerdoo--the sauce curdled because you used milk and not heavy cream as the recipe indicates. There is not enough fat in milk to keep the sauce from breaking. If you're trying to make the recipe lower in fat you'd need to experiment with a combination of heavy cream and milk to keep the sauce from breaking.

Awesome Honey Pecan Pork Chops

This was surprisingly good. I used boneless, skinless chicken breasts. Had to add chicken broth to pan as there were no drippings. Will make again!

Baked Orange Roughy Italian-Style

YUM! I used frozen mahi mahi and soaked them in milk for about a half hour to get rid of the fishy taste. My seafood-hating husband liked this too. Will make again!

Beef Tenderloin Stuffed with Lobster

This was very tasty with adaptations made to suit the ingredients I had on hand. I used filet mignon and fake crabmeat and low fat marg. Baked at same temp for about 25 min. We enjoyed this a lot.

Cantonese Dinner

This was average. Nothing more than a low-grade barbecue sauce. I used boneless, skinless chicken breasts and put them in frozen. Definitely need to add something to this to make this more savory. My husband liked it though.

Easy and Delicious Chicken

This was very good. I threw everything in at one and used frozen chicken breasts. The cream cheese did not completely dissolve but I'm not picky. My husb. said it was a little too cheesy for him but liked it otherwise. Will make again.

Rice, Oat, and Almond Crust

Resembles NOTHING close to a traditional pie crust. As the recipe stands the dough is too wet. I added an additional 2T brown rice flour which helped. I also added 1/2 tsp. cider vinegar and placed in freezer for 20 min. hoping to create a crispy crust. NOT EVEN CLOSE. Has a very mealy taste and texture.

Absolutely the Best Chocolate Chip Cookies

I adapted this recipe to lower the fat and am quite pleased with the results. My changes are: 1/4 c. butter flavor shortening; 3/4 c. unsweetened applesauce; 1 tsp. butter flavoring; 1 c. chocolate chips. My cookies were soft and slightly cakey. Had to bake for 20 min. I estimate my version to have about 5g fat per cookie instead of 13g in the original recipe. My husband liked these which surprised me because he's VERY picky about chocolate chip cookies.

Chicken Fried Steak I

This was ok but not great. To enhance the flavor I used Italian bread crumbs. Was too lazy to make the gravy. Meat was very tender. If you have good quality non-stick pans the breading will not fall off the steak. Also pan-fried steaks in about 1 T olive oil. I doubt I'll make this again.

Green Beans with Bread Crumbs

This was pretty tasty. I'm not a vegetable fan so it was nice to find a vegetable recipe that didn't load up on fat and cheese. BTW--I cut the oil back to about 1 T. My husband and I enjoyed this so I'll make this again.

Mediterranean Chicken

I made this yesterday at a grocery store food demo and it was a success. Fresh tomatoes are not in season so I used canned no-salt diced tomatoes; omitted the parsley and used Italian seasoning instead of fresh basil; used dried thyme instead of fresh. Everyone enjoyed it so I'll definitely make this again!

Chicken Satay

I was surprised at how tasty this was. I altered it a bit and left out the garlic and hot sauce. Marinated the chicken about 5 hours then sauteed the chicken in the marinade. The marinade thickened and clung to the chicken. The only complaint I have using my version is the chicken was a tad salty even though I used low salt soy sauce. My husband declared it one of his favorites and I'll make this again!
