Swedish Meatballs I

Reviewed: Jun. 7, 2002
Great dinner but made modifications according to our preferences and other's suggestions. I used low sodium-low fat soups; scratched cream of wheat and used 1/2 c. Italian bread crums; added 1/4 tsp. nutmeg to meatballs; 1 T Worcestershire to sauce and 1/2 can evap. milk. Served with mashed potatoes. There wasn't a ton of sauce though. Other than that we loved it. My husband stuffed himself and said these meatballs compete with this Mother's! I'll definitely make this again.

Cheddar Biscuits

Reviewed: May 21, 2002
These were SO GOOD! I could barely stop eating them. They are extremely close to Red Lobster's biscuits. I used soy cheddar cheese because it was all I had so I can imagine they'd taste even better with the real thing! My husband loved'em too.

Brown Family's Favorite Pumpkin Pie

Reviewed: May 13, 2002
YUM! I love this pie. Very flavorful. I gave half to my parents. I don't know if they liked it but that's tough because this is the only pumpkin pie I'll be making from now on!

Crispy Herb Baked Chicken

Reviewed: May 13, 2002
This was pretty good. I used low fat margarine instead of butter and baked on a rack to help keep bottom from turning to mush. There was no crisp to my chicken but good flavor so I'll make this again. Plus my husband liked it.

Danny's Macaroni and Cheese

Reviewed: May 13, 2002
Very good. A bit dry though. I used low fat cheddar and diced tomatoes with 1 tsp. Italian seasoning. I think the flavor will be a bit more intense when using stewed tomatoes. My husband liked it so I'll be making this again.

Honey Crunch Pecan Pie

Reviewed: May 13, 2002
DOUBLE YUM! I loved this pie. I used my own crust and baked in a 9" glass pie pan. For others who have had runny filling, please note TOTAL baking time is 45 min. to 1 hour and 5 min. I gave half of this pie to my parents. I don't know if they liked it yet but I don't care. This is the only pecan pie I'll be making from now on.

Parmesan Dijon Chicken

Reviewed: May 2, 2002
Well I liked this but my husband didn't. Hubby isn't crazy about dijon and the flavor of the mustard came through too much for him. I think the ingredients are a bit scant for 6 breasts. I used all ingredients for 2 large breasts.

Angel Pudding

Reviewed: Apr. 17, 2002
Yuck! This tasted like chocolate and vanilla pudding. I don't see what the big deal is about this recipe. The flavors did not mesh. I won't make this again.

Easy Cheesy Chicken I

Reviewed: Feb. 19, 2002
This was very good. I could not find cheddar cheese soup so I added 4 oz. low fat Velveeta; also used low fat/low sodium soups and sour cream; added 1/4 c. white wine. Will make again.

Barbeque Pork Two Ways

Reviewed: Feb. 19, 2002
This was pretty good. I used boneless, skinless chicken breasts. Not sure if I'll make it again. Taste was ordinary.

Fluffy Two Step Cheesecake I

Reviewed: Feb. 1, 2002
I liked this but my husband didn't. Due to ingredients on-hand I made adjustments; used FF cream cheese 16 oz.; 4 oz. ff cool whip and 4 oz. low fat cool whip; 2-3 T lemon juice; 1 tsp. vanilla.

Tofu Chocolate Pudding

Reviewed: Jan. 31, 2002
This is not that good. You can taste the tofu. I added a 1/2 c. to get rid of the tofu taste and it barely helped. I won't make this again.

Chicken Delicious

Reviewed: Jan. 22, 2002
Nothing to write home about. Perhaps if I'd used the full fat soups my review would be different but because the sodium and fat contents of Campbell's soups are soups are so high I refuse to use them. Using their low fat/low sodium soups results in a not so flavorful dish. I think there must be a misprint as I cannot see how this sauce can accommodate 10 chicken breasts! Any way, I won't make this again.

Slow-Cooker Pepper Steak

Reviewed: Jan. 22, 2002
I hate to be in the minority but my husband and I did not think this was anything special. Not extremely flavorful. Perhaps using red wine instead of the water would help. I doubt I'll make this again.

Minnesota's Favorite Cookie

Reviewed: Jan. 15, 2002
Good cookies! My husband enjoyed them. To lower fat and calories I used margarine; half the amount of milk chocolate chips; have the amount of nuts (used walnuts) and toasted them then ground them. Without these changes cookies would be even better! Will make again.

Chicken With Mushrooms

Reviewed: Jan. 10, 2002
This was good but not great. Left out the mushrooms as hubby would rather die than eat one. This is similar to chicken parmesan.

Tater Tot Bake

Reviewed: Jan. 7, 2002
I was surprised at how good this tasted. My husband liked it to. I used low fat/low sodium soup (omitted the milk since soup was not condensed); used low fat cheddar and soy cheddar and low fat ground beef. Very good flavor. My husband and I ate the whole thing!

No Bake Sugar Free Cheese Cake

Reviewed: Jan. 7, 2002
I made this for a family gathering and used a store-bought crust. My husband didn't like it and my mother said it had an "artificial" taste to it.

Baked Salmon Fillets Dijon

Reviewed: Jan. 7, 2002
I didn't care for this that much. My husband and I don't like fish much so maybe that's the problem. I used mahi mahi and low fat marg.

Bacon Wrapped Chicken

Reviewed: Jan. 7, 2002
My husband and I did not care for this. He did not like the chicken and I did not like the sauce. I do agree that cooking the bacon before bacon is a good idea.
