Baked Spaghetti I

This was good but would've been better had I not cut corners to save on calories. Will tinker with my low fat version to increase flavor.

Roasted Potato Medley

Very tasty. I used all red potatoes and water instead of broth as I didn't have broth. The vinegar was not overpowering. I'll make again!

Baked Scallops

This is delicious. Unfortunately my husband didn't like this. Not because of the recipe but he doesn't like scallops. I thought this dish was as good as any restaurant. I used low fat marg. and left out the parsely and parmesan as I didn't have them.

Cheese Cake Cups

These were so good and SO easy. I baked for 20 min. and topped them with a variety of jams and crushed nuts after baking. I'll definitely make these again.

Hot Jezebel

Savory Garlic Marinated Steaks

So good. I marinated a 2 lb. top sirloin steak overnight. Nice crust and very flavorful. BBQed for about 25 min. for med-well.

Spicy Grilled Chicken

Very tasty. Flavors were very subtle though. I think next time I'll marinate longer. Also used dried oregano as I did not have fresh. Will definitely make again!

Banana Banana Bread

Very good. I altered the recipe to make it more healthy--used 1 1/2 c. flour + 1/2 c. whole wheat pastry flour; 1/4 c. butter + 1/4 c. plain applesauce; 1/2 c. brown sugar; added 1 tsp. cinn. and 1/4 tsp. nutmeg. Took awhile for it to bake--about 70 min. Good way to use up old bananas!

Lemon Horseradish New Potatoes

I was surprised how good these were. My husband even had seconds. The horseradish takes on a sweet taste and the lemon is very mild. I used low fat marg. to save on calories. Will definitely make again.

Grecian Pork Tenderloin

Very tasty. I'm allergic to pork so I used boneless, skinless chicken breasts. Marinated them for about 5 hours starting from semi-frozen state. I think I'll marinate a little longer next time to bring out the lime. Will make again.

Mid-Summer Italian Bread Salad

This salad was wonderful! Very fresh tasting and flavorful. I chopped all ingredients in food processor except for tomatoes and bread. Did not measure salad ingredients (only dressing). Ended up with a lot of salad so I doubled dressing. My picky husband enjoyed this! The next day I used the salad (minus bread) as a sauce. I sauteed boneless, skinless chicken breast pieces; added salad and heated through and served over pasta. Very tasty. Will definitely make this again!

Buttermilk Potato Fried Chicken

Chili-Lime Chicken Kabobs

I was surprised how good this tasted. I doubled the marinade for 2 B&S chick. breasts; sauteed in skillet as we don't have a bbq and served over rice and sprinkled cheddar cheese on top. Even my picky husband liked it!

Fresh Corn and Tomato Casserole

My husband and I enjoyed this a lot. I changed the prep. a bit. Instead of sauteeing corn (used frozen) I mixed all ingredients together and baked. Added one green onion; used low fat marg. and turkey bacon; omitted salt. Very flavorful and would be great for a picnic.

Smoky Mountain Chicken

My husband and I enjoyed this a lot. I changed the prep. a bit. Instead of seasoning and baking I went through all steps and baked. I didn't use a whole bottle of BBQ sauce--I just spooned it on. I think next time I'll cut back on the Italian Seasoning. It didn't seem to go with the other ingredients.

Blueberry Bread I

This bread is pretty good. Pretty mild in flavor though so next time I think I'll add cinnamon and/or vanilla. To save on fat and calories I cut sugar to 3/4 c.; used 1 c. whole wheat pastry flour + 2 c. all-purpose flour; used 2T applesauce + 1T vege. oil; used 2 c. blueberries and omitted nuts. Baked in a 9x5 pan and it took forever to bake--about 1 1/2 hours.

Jay's Jerk Chicken

This was ok but not great. I will admit though that it may be my fault that this didn't taste to my liking as I let the chicken marinate 2 days. All I could taste was soy sauce and green onions. My husband liked it. We don't have a grill so I baked it in the oven. I'll try this again but not marinate for so long.

Caribbean Crabmeat Salad

This was pretty good. I left out the mango as my husband doesn't like them. The salad is light in flavor and refreshing. My husband didn't like the salad that much as he has a phobia about eating cold seafood. Oh well I guess I won't be making this again.

Chicken Breasts with Herb Basting Sauce
