Chicken Jerusalem I

Reviewed: Jan. 15, 2003
Though my rating is not fair, I'm giving it 3 stars as I'd never fix this according to the recipe as there's enough sodium to give a horse a heart attack. So fixing it my way was no good (using low sodium soup and half the ranch dressing). I won't make this my way again.

Feta Chicken

Reviewed: Jan. 7, 2003
This is getting 3 stars because I found out my husband does not like feta. I love feta. I found this to be an OK recipe but nothing outstanding. I used low fat tomato-basil feta. So I won't be making this again, unfortunately.

Chicken Rotini Stovetop Casserole

Reviewed: Jan. 7, 2003
I'm giving this 4 stars because had I followed the recipe I know this would've tasted great. I made this uusing low fat ingredients and it was very bland. So live a little and use cream and butter.

Lemon Pepper Shrimp with Mustard

Reviewed: Dec. 24, 2002
Very good! I used low fat margarine and dried parsley as it is used for color only. This was a very fast light meal and I served it over basmati rice. I don't believe this would serve 8 people though. Maybe 4-6. Even my picky husband enjoyed this. I'll definitely make this again and serve it with rolls to slurp up the extra sauce.

Chicken Tortilla Soup I

Reviewed: Dec. 24, 2002
This was very tasty. I didn't have leftover chicken so I sauteed the chicken w/onions; cut back on the liquid and cooked it on low heat for a few hours. I'll definitely make this again. Very easy and makes good leftovers! Even my picky husband enjoyed it.

Slow Cooker Stuffing

Reviewed: Dec. 3, 2002
This stuffing is fantastic! My mother made this for Thanksgiving. It's your standard stuffing recipe but all the ingredients come together to make this an outstanding stuffing recipe. I'll definitely be making this for myself and other holidays.

Homestyle Turkey, the Michigander Way

Reviewed: Dec. 3, 2002
I'm giving this 4 stars because everyone else liked it. I didn't think it was that great. It tasted like plain, old turkey. It was definitely moist though and easy. I used an 11 lb. turkey and cooked it in my Nesco. It took about 1 hr. and 45 min. I may make this again since everyone else liked it but I'm not sure.

Cranberry Sauce Extraordinaire

Reviewed: Dec. 3, 2002
Finally I have found an outstanding cranberry sauce. I enjoyed this and so did my family at Thanksgiving. It was very easy to make. My grocery store didn't have pears so I used 2 apples and walnuts instead of pecans because that's all I had. I'll definitely be making this every Thanksgiving. The servings are accurate and then some.

Taco Pie

Reviewed: Nov. 27, 2002
Very tasty. I used all low fat ingredients. A square cake pan is way to small for this recipe. I used a 13x9 pan and it all fit fine. 14.5 oz. of tortilla chips is also way too much. About 4 oz would be plenty. This could benefit from some chopped tomatoes on top. My husband enjoyed this so I'll definitely make this again!

Creamy Pesto Shrimp

Reviewed: Nov. 22, 2002
YUM and SO EASY! I cut the recipe in half and used low fat ingredients--low fat marg. and half & half. My husband even liked it and he's not a big fan of seafood or creamy sauces. I'll definitely make this again.

Ham Tetrazzini

Reviewed: Nov. 20, 2002
I was surprised at how good this tasted with my revisions--skip onions; use low fat marg.; use low fat mushroom soup; reduce water to 1/4 c.; add 1/4 c. dry white wine; add 1/4 c. parmesan. Very flavorful my way. I didn't use the parsley or pimento because I didn't have it. You do need those two ingredients for color purposes only. I'll definitely make this again. Even my husband enjoyed it!

Monkey Bread I

Reviewed: Nov. 12, 2002
Delicious! I made this for my in-laws and my mother-in-law asked for the recipe. It's a bit time consuming to cut up the biscuits and coat them but it's worth it.

Chicken and Cheese Stuffed Jumbo Shells

Reviewed: Nov. 5, 2002
Very good. I cooked the shells for 5 min. to make them easier to handle while stuffing and used low fat cheddar and low sodium sauce. My shells must've absorbed some of the sauce so next time I will add more as they were a tad dry. My picky husband enjoyed them!

Cake Mix Cookies VII

Reviewed: Sep. 28, 2002
Very good but does taste like cake mix. However if someone didn't know it was cake mix they may not suspect. 1 c. chips is not quite enough. Next time I'll use 1 1/2 c. My husband is enjoying them. I used a 1 T cookie scoop and got about 46 cookies avg.-size.

Baked Pesto Chicken

Reviewed: Sep. 28, 2002
YUM! I was surprised at how tasty this was. Used chunky spaget. sauce and parm. because that's all I had. Will keep pesto on hand now for nights when I'm tired or when I don't know what to make.

Coconut Cream Pie I

Reviewed: Sep. 17, 2002
I really liked this but my husband did not. He did not like the coconut sprinkled on top. Definitely use coconut pudding otherwise your pie will taste like vanilla pudding w/coconut. I could not find coconut pudding so I used vanilla but added 3 tsp. of coconut extract. I also toasted the coconut sprinkled on top of the pie to add color and used a graham cracker crust. I served this to 2 other people who did not offer any comments but did clean their plates. I doubt I'll make this again since my husband did not care for it.

Honey Glazed Ham

Reviewed: Sep. 16, 2002
Very good. Tastes almost exactly like a purchased honey glazed ham. I didn't bother with the entire amount of cloves as it would've taken me all day to insert them. Still had good flavor and I didn't bother with turning on the broiler to carmelize. Will make again.

Corn Dog Casserole

Reviewed: Sep. 16, 2002
I really enjoyed this casserole. Tastes just like a corn dog. Used white onions instead of green as that's all I had. Unfortunately my husband did not like it so we won't be having this again.

Grandma's Moist Cake

Reviewed: Aug. 26, 2002
Yea! Finally a cake recipe I can't ruin. This was so easy and very good. A tad crumbly but other than that I love it. The first words out of my husband's mouth was "mmmmmm." I made a cream cheese chocolate frosting to go on the layers. So good! I'll definitately make this again!

Roasted Lemon Herb Chicken

Reviewed: Aug. 18, 2002
Very good. I used boneless, skinless breasts; dumped on all the olive oil and lemon juice then sprinkled both sides with the herb blend. Tasty and tender. Baked at 350 for 30 min.
