Bacon Chicken I

This dish was average. It was certainly easy to prepare. I used low fat; low sodium soup and didn't bother with leaving the bacon on to brown. There are better dishes out there.

Slow Cooker Lasagna

I hated this lasagne. It was VERY salty and I saw no benefit to cooking it in the slow cooker. No time was saved. It's faster to cook lasagne in the oven and the taste was lacking. I'll stick with my tried and true lasagne recipe from Bon Appetit!

Feta Cheese Foldovers

These were very good. My family enjoyed them a lot. I made these in advance, froze them and thawed in the fridge overnight and followed the heating instructions. I'll be making these again!

Slow Cooker Spaghetti Sauce I

This sauce is really good. I didn't have a crockpot big enough so I used my Nesco oven and set the temp at 250 degrees and cooked it for about 6 1/2 hours. I then put the sauce in canning jars and processed it for 35 min. I'm looking forward to trying the sauce on pasta!

Anniversary Chicken I

This was pretty good. I changed it a bit. I scored the chicken and allowed it to marinate in the teriyaki for about an hour. I used a mix for the ranch dressing, low fat chedder, turkey bacon and white onions. My fiance did not like the ranch and I thought it tasted a bit salty. Probably because I used the mix for the dressing. Next time I'll leave off the ranch. This was still very good and would make this again.

Slow Cooker Beef Stew I

This just tasted like regular old beef stew to me. Nothing unusual or great about it. My fiance said there was too much meat and not enough vegetables. I'll keep searching for another recipes. I think this would've benefited from a 1/2 c. red wine.

Creamy Banana Bread

This was very good. I left out the nuts and mixed in the cinnamon and brown sugar. However next time I'll cut the cinnamon in half and add an extra banana.

Braised Balsamic Chicken

I can't believe how good this was! I omitted the oil and sauteed the onions and breasts in water and I used fresh rosemary and fresh basil. I served the chicken with risotto and poured the sauce onto the risotto. The chicken was excellent and I'll definitely serve it again.

Cajun Chicken Pasta

Wonderful!!! I omitted the butter and doubled the seasonings and used fat free cream. The cream was a little thin for my taste. I'll try to thicken it next time and see if that works. In any event this dish had wonderful flavor and the colors looked very pretty on the plate. This could easily be used as a vegetarian dish. I'll definitely make this again.

Creamy Au Gratin Potatoes

This was pretty good. I have a habit of making high fat recipes into low fat ones. This one was ok but not great using low fat cheese. For some reason the cheese burned on the bottom. I baked it in a glass dish. If I had used full fat cheese I'm sure it would've been fabulous. I save this recipe for special occasions and use the right cheese.

Bake Sale Lemon Bars

These lemon bars were VERY good. I had some trouble with them though. I have NO idea how you all spread this dough to fit a 13x9 pan. It was too sticky so I put it in an 8x8 and cooked it for the same amount of time and it came out fine. I also had trouble cutting the bars. The bottom was very hard. I wanted to add more lemon juice since other reviewers suggested this but I didn't have more than 1/4 c. so I put in 1/2 tsp. lemon oil. That did the trick. I'll definitely make these again.

BLT Dip

I could hardly stop eating this dip. I brought it to a football party and used Ritz Air Crisps as suggested by another reviewer. Very tasty. I sprinkled the top with a few chopped tomatoes to add some more color. My fiance didn't like it though. He couldn't give a specific reason. I'm not sure if anyone else liked it as nothing was said. Despite that, I'll still make this again.

Chicken Parmigiana

I REALLY liked this recipe. I made my own spaghetti sauce and used parmesan reggiano. I also skipped dipping the breasts in egg as I thought it was unnecessary and it was. Cooking temp. and time are accurate. Even my fussy fiance liked this. I'll definitely make this again.

Chicken Marsala

This was good but not great. I'm terrible at flattening meat and poultry so I didn't bother. I didn't add mushrooms either as my fiance hates them. The chicken was tender and flavor pretty good but I like the marsala dishes more from my favorite Italian restaurant. My fiance was neutral on this. I doubt I'll make it again.

RamJam Chicken

This was pretty good. I marinated skinless, boneless chicken breasts over night. I don't have a barbecue so I baked them in a glass dish, in the marinade, at 425 degrees for 30 min. My chicken was a tad dry. I probably should have baked 5-10 min. less. I think this would've tasted better if I'd had a barbecue to use. The recipe does not make much marinade and I barely had enough to cover 2 chicken breasts. The lemon flavor really came through. I'll make this again.

Bourbon Chicken

This was VERY good. I used boneless skinless chicken breasts and let it marinate for 1 1/2 days. I did cook the chicken too long. I would also cut back a little on the soy and bourbon. I think 1 hour would have been more than enough. This tastes VERY close to my favorite bourbon chicken served at The Big Easy. I'll definitely make this again.

Brownies II

Yuck! My fiance and I did not like these. I guess we aren't German chocolate fans. I used this recipe to use up a Duncan Hines German Chocolate Cake mix. It took about 25 minutes for the brownies to cook. I will not be making these again and will stick to the brownie mix for now.

Baked Ziti I

I was surprised at how good this was. I used organic, low fat sour cream; organic pasta sauce and 5% fat ground meat. I didn't expect much from this recipe but will definitely make this again. I think the sour cream did the trick. Now I'm wondering if sour cream would be a good replacement for ricotta in lasagne!

Better Than Sex Cake II

I took this cake to a barbecue over the weekend and everyone enjoyed it. I definitely will use more toffee bars, perhaps 5 and will not use all of the caramel sauce as it slipped under the cake and made it difficult to serve. Will definitely make this again.
