Spinach Quiche

This was delicious. I used fresh mushrooms and skipped the crust. Divided batter into muffin tins, baked then froze them. They reheated great! My family loved them.

Apple Banana Smoothie

Classic Spanish Sangria

Blue Cheese Beef Tenderloin

I'm giving this 3 stars because of the marinade. 30 min. is NOT long enough to impart any flavor. Next time I'd try marinating about 4 hours. The flavor of the marinade was virtually nonexistant. The beef itself was delicious as was the blue cheese sauce.

Baked Omelet

Delicious and easy. I changed this a bit by omitting ham and onion. Used low fat chedd. and Monterey Jack; used half and half instead of milk; added about 2T sour cream and 1 T melted butter and 2 tsp. cornstarch.

Brandy Butter (Hard Sauce)

This is delicious. I'd never had hard sauce before and didn't know what to expect. I used bourbon because that was what I had on hand. Don't be confused by the word "sauce." This comes out as a spread. I served this with Chocolate Plum Pudding found on this site.

Chocolate Plum Pudding Cake

This was suprisingly good. I baked this in an 11x7 snowflake cake pan. It took close to 1 1/2 hours to cook through. The cake is sticky to the touch so be careful when transferring to a cake pan. I served with on Christmas with Brandy Butter found on this site.

Awesome Broccoli-Cheese Casserole

This is pretty good. I made it as an entree by adding chopped ham and served over noodles. I used the low fat soup and low fat mayo. As an entree there was too much broccoli. Will cut that back to 1 pkg. Was too salty with ham and will try chicken next time.

Oven Scrambled Eggs

I'm rating this based on method alone. I used my own scrambled egg recipe (2T OF SOUR CREAM FOR EVERY TWO EGGS AND 1/4 TSP. CORNSTARCH FOR EACH EGG) but I still added the butter. My eggs took about 1/2 hour and I stirred them about every 10 minutes.

Beef Enchiladas I

Good! I used Boca crumbles instead of steak; scratched the chile peppers and tomato sauce; used 1 can enchilada sauce and one jar salsa; used flour tortillas. To prevent tortillas from getting gummy DO NOT put any sauce on the bottom of the pan.

Brian's Easy Stuffed Flounder

This was very good. I used flounder fillets and folded them in half. Drizzled olive oil on the outside so fish would not dry out. Will make again.

Chicken Pesto Pizza

This was so good and easy! I made a few changes to suit our tastes: drained one can of diced tomato; skipped artichokes and used mozzarella. Next time I think I'll make this with shrimp instead of chicken. I'll definitely make this again.

Slow Cooker Pizza

SO GOOD!!! Here's how I made this healthy (and my husband was none the wiser): Used Boca crumbles instead of ground beef; used half low fat mozzarella and have soy mozzarella; used low sodium tomato soup; used 1 jar pizza sauce and 1 jar spaghetti sauce; and used turkey pepperoni instead of full fat. Turkey pepperoni is excellent. I didn't cook the pasta with the rest of the ingredients as I was afraid it would get mushy. I'll definitely make this again!

Sesame Pasta Chicken Salad

Delicious! Served this as a warm entree. Used white wine vinegar as I did not have rice vinegar and sauteed chicken in dressing. My husband and I enjoyed this a lot so I'll definitely make this again!
