No Bake Granola Bars

I'm obsessed with this recipe! I've made it several times now. It's a perfect breakfast for me, because I never have the time to cook breakfast. I generally let them sit in the fridge over night before eating them and keep the extra bars in the refridgerator or freezer until I eat them. They tend to get a little mushy if left out for too long. I love adding dates to them! This time, I added cranberries, sunflower seeds, flax seed, dates, oats, organic peanut/coconut butter, honey,'and carob chips. Delicious!

Pad Thai

This was my first time cooking pad thai. This is a great basic recipe! I eliminated the fish oil and white wine vinegar and cooked everything in coconut milk with some cilantro and sugar. I added shrimp, green peppers, pineapple, garlic, lime, and cucumbers along with the other ingredients listed in the recipe. Complete success! Will definitely make again!
