Moist Carrot Cake

Reviewed: Jul. 15, 2010
This was a good basic recipe. I like many others here don't care to use so much oil so i used 1/2 cup oil and 1/2 cup of apple butter. I reduced the sugar to 1-1/2 cups and omitted the walnuts and coconut from the cupcake. I made a coconut flavored cream cheese frosting and toasted some unsweetened coconut to decorate.

Fluffy Canadian Pancakes

Reviewed: Jul. 10, 2010
These were ok for me. My favorite still is the Fluffy Pancake recipe on here. My mom makes a pancake similar to this one and I love them when she makes them but I just don't make them the same way. Could just be because I love my mom's and so my own making of this type will not compare! All said, this is a good recipe so do give it a try!

Homemade Focaccia Bread

Reviewed: Jun. 27, 2010
My first time ever making a Focaccia Bread. Turned out really nice - I combined some olive oil with fresh minced garlic, some maldon salt, brushed over top of the bread and then sprinked with fresh chopped rosemary. Very good!

Biscotti

Reviewed: Jun. 20, 2010
This is a great recipe. I didn't use anise - but only because I was making them to give to my dad and I wasn't sure he would like it. I used half vanilla and half almond like another reviewer did. I will make these again myself for myself and use the anise! I love how perfectly these baked and cut!

Coconut Banana Bread with Lime Glaze - Cooking Light

Reviewed: Jun. 19, 2010
I have made this particular recipe several times - and it is awesome! I have also used coconut extract in place of vanilla. The lime and coconut go so well together!

Red Velvet Cupcakes

Reviewed: Jun. 18, 2010
My not so red velvet turned out very delicious. After I started to make these I realized I only had pink food color. I used that but didn't get that "red" look. I will definitely make these again and have some red color! This cupcake is different from others I have tried. It has a heavier texture but isn't heavy (weight wise). I absolutely love it and it is a definite keeper for me.

To Die For Blueberry Muffins

Reviewed: Jun. 16, 2010
This is a great recipe. I am sure if I made it the way it was written it would still be great. All I changed was I added about a half tsp almond extract and omitted the crumb topping. Once they were baked and cooled I made a glaze with 1/2 Tablespoon butter, 2/3 cup powdered sugar and 1/2 teaspoon almond extract adding enough milk to make a glazing consistency. I then drizzled it over the top of the muffins. I am a big fan of almond/blueberry mix!

Savory Grilled Potatoes

Reviewed: Jun. 15, 2010
This was delicious! I followed the recipe as written. The smell while cooking was just mouthwatering! I made this in my oven as I was also making White Castle Sliders and had to heat the oven up anyway. A definite make again!

Szechwan Shrimp

Reviewed: Jun. 14, 2010
This just wasn't much to our liking. I liked the concept but will stick to my other Asian shrimp recipes. I gave it 3 stars because it wasn't horrible and it we were able to eat it. Grumpy didn't care for it at all.

Jiffy Cinnamon Rolls

Reviewed: Jun. 12, 2010
I wasn't sure what to expect with this recipe. I knew it was basically a biscuit dough I was making so I wasn't too sure I would do a good job - that said, these turned out great! I made the recipe exactly as stated and I give it a 5 star as written. I would definitely make these again. Its easy to devour more than one!

Donut Muffins

Reviewed: Jun. 11, 2010
Oh my goodness. This was perfect for me. I love the fact there are no eggs in this recipe. I got 24 mini donut muffins that were crispy like outside tender inside and had such yummy flavor for such simple ingredients. I loved the nutmeg in the donut - if you don't love nutmeg then just sub cinnamon. There should be no reason to not love this donut! Thank you Dianne!!

Cajun Chicken Pasta

Reviewed: Jun. 10, 2010
I followed this pretty closely except like others I substituted sour cream in place of the heavy cream (I'm sure it is heavenly with the heavy cream!). and skipped the parm (mostly because I just wanted to eat and forgot!). I didn't have dried basil but I had fresh and I always use fresh anyway when I have it. Definitely a keeper recipe.

Mojito

Reviewed: Jun. 2, 2010
Good start...needs more sugar and you need to muddle the mint with the sugar (I also add a bit of lime juice to make muddling easier). I use two sprigs of fresh mint (which equaled about 10 mint leaves). I used about 1 teaspoon confectioner's sugar when muddling and then added 1 packet of splenda to help sweeten it more to my taste. Without the additions it tasted mostly like soda water.

Sweet Restaurant Slaw

Reviewed: Jun. 1, 2010
I tried this the way it was written and was 3 star - but when I use Hellmann's mayo instead of salad dressing - cut the sugar in half and omit the poppy seeds it becomes 5 star (IMO). I'm not someone who cares for salad dressing and that with all the sugar made it too sweet for me.

Simple White Cake

Reviewed: May 2, 2010
Well, I don't know what I did wrong....but they did not turn out pretty in any way and basically melted in the cupcake tins. I also don't agree that the flavor was fantastic. I'm not sure I would try this recipe again but I'm happy others didn't have the bad luck I did!

Banana Rum Cake

Reviewed: Oct. 3, 2009
The cake recipe is perfect as written. I am not a big cake mix user as I prefer to make homemade, but I am not against using cake mixes either! I am giving 4 stars because the amount of frosting is way too much for me. I ended up using the 2 Tbsp of rum, the 1/3 cup butter and only 2 cups of powdered sugar and the frosting was just the right consistency. However, if making this again, I would halve the frosting that I made as it was enough for 2 cakes.
