Sweet Dinner Rolls

I no longer have a bread machine so I used my kitchen-aid mixer with the dough hook instead. I still placed ingredients in the bowl in the order required for a bread machine. These rolls turned out so soft and tender and were beautiful!

Moist and Savory Stuffing

To me, this is ok if your in a hurry. I think I prefer my stuffing baked. To me, while flavorful, this was too moist and mushy. I'll stick to my own stuffing recipe - will keep using the swanson broth, but not like this. I don't think there was anything wrong with the stuffing cubes either - I think it was all in the execution and way the recipe is made and the fact I prefer my stuffing baked.

Quick and Flavorful Vegetables

I personally wish I had not read reviews prior to making this. Because I did, I was afraid the recipe would be too salty. Quite the contrary. I roasted asparagus and mushrooms with olive oil and fresh thyme. I did not season the vegetables because I felt seasoning them would cause them to be too strong. I will make this again, will not season my veggies, but instead of 1 packet, I will go ahead and use the two packets the recipe calls for. This is a case of not following the instructions and paying for it by not having as flavorful a dish as I may have had if I had made the recipe as stated.

Pumpkin Muffins with Streusel Topping

Made these this morning with adjustments to suit what I had in the kitchen as well as cutting the sugar some. I have found that less sugar doesn't seem to affect the outcome for the most part. I used a total of 1-1/2 cups of sugar instead of 2, didn't have applesauce so I went with all pumpkin. Stirred in some cranberries and topped as the recipe reads. They were excellent, moist and still sweet. A definite keeper - especially for a pumpkin lover!

Gooey Chocolate Peanut Butter Bars

This is definitely a great base for what I did. Instead of peanut butter and coconut I used 1/2 cup canned pumpkin puree and used mini chocolate chips. I also used the 13x9 pan. I will make them as pumpkin bars again, however I will us a smaller pan, perhaps 8x11. Loved the pumpkin!

Parmesan Garlic Rolls

Made these tonight and they are amazing! Grumpy wanted spaghetti and I had no bread, so I knew these rolls were on this site and that I wanted to eventually try them...so that I did! I love the garlic and cheese. They are tender and fluffy and delicious. You can't go wrong with this recipe!

Apple Cider Glazed Doughnuts

These are the most amazing light weight doughnuts! Grumpy said they were the best doughnuts I have ever made :0) I got about 2 dozen doughnuts and ran out of glaze before I was done so I mixed a tablespoon of butter with 1/2 cup powdered sugar and about 2 tablespoons pure maple syrup and frosted the last 6. YUMMY! Definite keeper.

Harvest Pumpkin Cupcakes

I can say that the cake and frosting is delicious and worth 5 stars! I baked the recipe as a whole cake....but then instead of frosting it, I crumbled it up and mixed in about half of the frosting to create cake balls. Coated with dark chocolate and orange colored candy melts to create Halloween Themed Bonbons. Everyone loved them!

Pumpkin-Pecan Braid

I will definitely make this again! Very quick and easy and a delicious quick breakfast to throw together on the weekend. You could do this for a crowd in no time flat. I used the seamless crescent dough, substituted pumpkin pie spice for the spices (1-1/2 tsp), didn't mix the nuts into the pumpkin, just sprinkled a few walnuts (chopped & toasted) on top and instead of milk, used maple syrup in the glaze. There are only two of us in the house and this was gone in no time flat.

1-Dish Pepperoni Cheese Pizza Bake

This gets 5 stars for being quick, easy, and delicious! I would definitely make pizza this way again when I am short on time or feeling a little lazy. :) I was thrown by the recipe calling for 2 packages of yeast for just 1-1/2 cups of flour, however I followed the recipe as written. The only thing I did any differently was to add a little black olive and spicy pickled pepper strips to the top of the pizza prior to baking. Makes a nice deep dish crust and bakes like a pie. If your yeast handicapped, this won't hurt to make since you don't have to do anything but mix, pat down and place in the oven to bake!

BBQ Chicken Crescents

I made these with 1/8 cup Sweet Baby Ray's BBQ and 1/8 cup Frank's Red Hot. Colby cheese instead of cheddar (Grumpy's fav cheese) and Reduced Fat Crescent rolls. There were pretty good and I thought they were so pretty :)

Chipotle Macaroni and Cheese

I adapted the recipe to lower fat and had some lobster that I wanted to add to it. I used fat free half and half, chipotle powder instead of the pepper and half of the cheese was reduced fat cheddar and the other half, havarti (to give that rich buttery feel). For the chicken base I substituted Lobster base. Made these into appy style small plates and topped each small plate with 1 tablespoon of the pepper jack cheese before baking. Grumpy LOVED it. Very creamy and awesome flavor from the lobster base! The little bites of lobster in the dish just made it even more yummy! I feel the original recipe without changes would be high on my list also!

Caramel Corn Treat Bags

Delicious! When making this I used the candy thermometer to see what temp the syrup came to after boiling for the alloted time - and it was at a hard crack - The corn was crispy and stayed that way. Love this recipe! So easy!

Classic Caramel Corn

This was excellent. While cooking the syrup I also used a candy thermometer. I wanted to see how hot it got while boiling for the suggested amount of time - and it did come to a hard crack stage. The caramel coating was crisp, crunchy and full of caramel flavor. One of our favorites! I shared this at work also and it went over VERY well!

Sweet Italian Chicken Sausage and Tortellini Soup

This was delicious! I made it using the Jalapeno flavor instead of Sweet Italian flavor. Grumpy was sick with a cold so I thought the heat from the sausage would work well for him. I also used a semi sweet white wine - the kind I like to drink and I feel that made it perfect! (I buy Brianna from Coyote Vineyards in Clayton, NY). I omitted the extra butter, I felt we didn't need it. This will definitely be on my table again!

Pulled Chicken Sandwiches

I have to give this one 5 stars! It was very delicious in my opinion. I used Woeber's Sweet & Spicy Mustard instead of yellow mustard and instead of white sugar went with brown sugar. Absolutely delicious. Very quick and easy meal for a busy night!

Easy Weeknight Creamy Chicken Alfredo

This was much better than I expected after reading the reviews. The sauce was actually pretty good and very easy. I went with half and half and instead of 1/2 cup parm I used 1/4 cup parm and 1/4 cup mozzarella. I used Shirtake noodles instead of pasta to lower the carbs and instead of chicken I sauteed some shrimp coated in Cajun seasoning. Next time I would use the pasta and save the Shirtake for something else. All in all I feel this is a good starter.
