Amazing Muffin Cups

If the hash browns have not started to crisp at the bottom before putting the egg mixture in, I suggest letting it have a longer baking time. I altered the recipe to fit ingredients I had here, made my own hashbrowns by parboiling the potatoes then shredding them. I added some chili powder and cumin the mixture since I didn't have Mexican flavored cheese. No peppers except jalapeno so I used about 1 tablespoon of that and chopped tomato and tomatillo to stir in. I also reduced the sausage to about half. This is a great base recipe. You can do so many different flavors. It gets 5 stars for that purpose alone! 4/13/14 - I made these again today and left the Mexican flavors out. Sharp Cheddar, sauteed mushrooms and red peppers and chives for flavor. AMAZING is the word. :)

Pork Carnitas with Cilantro Tomatillo Sauce

This is a great recipe. I didn't use pork because we very rarely eat anything pork in our home unless it's bacon. I used boneless skinless chicken thighs. Since I had the corn oil that Mazola sent, I did use their oil. However, I used about a teaspoon of Adobo along with the spices and added some cumin. Squeezed some lime juice in the salsa and ate some sliced avocado - Oh, and I did use flour tortillas (homemade ones!) instead of corn since we are not fans of corn tortillas here (unless they are fried!). I would definitely make this again.

No Sugar Oatmeal Cookies

I first had these cookies when our intern made them and brought them into the office. I loved them! After baking them myself, I realize it reminds me a little bit of baked oatmeal, but they are really good when your watching your calorie/carb/sugar intake. I didn't use raisins, instead I used dark chocolate chips and I didn't have applesauce but I did have apple butter that my mom had made so I went with that. Great recipe for those cravings and you aren't killing your diet!

Buttermilk King Cake with Cream Cheese Filling

skipped cream cheese and went with almond filling. I didn't have buttermilk so I used almond milk with a teaspoon of vinegar..I would definitely go with buttermilk next time. I'm sure its a 5 star recipe. I think I just overbaked it a little.

Carrot Cake

The cake recipe itself is basically the same as Paula Deen's recipe except she uses pecans and this one used walnuts. I did not use the frosting recipe here, stuck with the one from Paula Deen. Added raisins, cut the oil to 1 cup and subbed 1/2 cup applesauce for the rest of the oil to reduce fat and since I had 4 cups of shredded carrots, went with it. Turned out awesome.

Easy Sausage Gravy and Biscuits

only differences: almond milk since I never have cow's milk in my house and I had to use about 1/3 cup of flour to thicken it to the right consistency. I made homemade biscuits rather than buying the canned.

Angel Chicken Pasta

I had to adapt this to fit what ingredients I did have in my kitchen. I used regular cream of mushroom soup, 1/2 cup of fat free italian dressing, plain (1/3 less fat) cream cheese - but I had chives so I chopped some up and added them. I went with only 2 tablespoons of butter to reduce fat more and stuck with the wine. I loved it, Grumpy thought it needed stronger flavor (so next time I will make sure to have the seasoning packet mix.) I also used chicken tenders and sauteed fresh mushrooms to add more mushroom to the mix.

Peanut Butter Cookies IX

these are excellent. I used all white flour since I had no whole wheat and I did cut the sugar to 1/2 cup each. I followed Grannyloohoo's suggestion of the almond extract and instead of chocolate used peanut butter. I was in a really peanut buttery mood today. :) Great base recipe. I'm sure that made as written they are fab also!

RITZ Push-Cart Hot Dog Bites

Yummy! Loved the onions and the heat was right up my alley. I even added some sliced jalapeno piece on top to give the bite a little color. I could eat a lot of these. I skipped the tomato paste just because Grumpy doesn't like it. For this reason my topping was just a little liquidy, but that was fine, I just strained the oinons out with a fork to top the cracker so they didn't get soggy.

RITZ White Pizza Meatball Dip, created by Lombardi's Pizza

I enjoyed the recipe enough to make it again, but personally, I could go without the meatballs in it. I did add fresh minced garlic to the mix as well as used fresh oregano over dried. I really loved the dip before the meatballs. Would definitely make it again.

RITZ Fried Ravioli

I love the light crispy crust this gave the ravioli. My only mistake was choosing a ravioli that we don't normally eat and I ended up not liking the filling (no fault of this recipe!). I will make this again using our favorite ravioli!

RITZ Spicy Asian Chicken Wings

Oh a DEFINITE keeper! I made these for dinner and since it was just two of us I went with chicken legs. I skipped the frying because the chicken legs were pretty big in my opinion to do that - but followed the recipe to a T and instead, baked at 375 degrees until done (about 35-40 minutes). Before baking I did spray with some cooking spray. If I were to make the wings themselves I would follow the recipe. However, the legs were crispy skin (just look at the photo!) and man, the skin, that was almost the best part of the recipe (with the sauce of course!)

Lemon Curd

I used meyer lemons which gave it less of a tang. I like it but prefer the tang. Gave it 5 stars because with regular lemons it would be that for me! Turned out great. If your still having runny curd after 20 minutes of stirring your heat may not be high enough. It should thicken with the eggs.

Four-Cheese Italian with Garlic Basil Sauce

What I loved the most about this was the Campanelle Pasta I used. :)The little horns filled up with the peas an sauce. As far as flavor goes, I didn't feel it had much flavor at all. Next time I would try to do something else to enhance the flavor of the broth because the sausage just doesn't carry it. I used the 3 cheese red pepper sausage for this particular recipe. After tasting the sauce I added some shredded asiago to the sauce along with more pepper and salt, but it didn't do anything for it. Grumpy's not here to give his opinion. He'll probably come home, warm it up, and say it was good, I should make it again. ;) You never know! I think I just have a really developed palate and need more flavor in my food. All in all it is a good base recipe, but I would probably only make it again if I had nothing else on hand to do quickly.

Touchdown Italian Sausage Chili

We liked this but I did make changes to it by adding chili and cumin powder. I also used the Jalapeno Cheese Sausage Links by Johnsonville (which are fabulous by the way!). I also reduced the amount of tomatoes by 1 can and it still seemed like a lot of diced tomatoes. Iused kidney beans instead of the white bean but only because I didn't have any. I think the Sherry is what made this stand out flavor wise and will make sure to try this again with more modifications - only still will use the Sherry! Grumpy said it was better the second day as he had the leftovers for lunch.

Harvest Pumpkin-Oatmeal Raisin Cookies

Love these cookies. Love how soft they were. I used chopped pecans and golden raisins since that is what I had on hand. I also didn't have quite enough pumpkin (I've been cooking with pumpkin a lot and didn't realize I was so low!) so I had to use about half a cup of applesauce to replace it. They were excellent - however I have a feeling that I will enjoy them even more with all pumpkin!

Gnocchi with Sage-Butter Sauce

What put this over the top for me was I used it on homemade gnocchi. I love sage, garlic and browned butter. The little crispy bits from sauteeing the gnocchi just was fabulous. :) I used fresh sage since I had it on hand.

Maple Basted Roast Turkey with Cranberry Pan Gravy

I couldn't find it in myself to make cranberry gravy. As it was, Grumpy would not eat anymore of the gravy that I did make because the maple syrup made it too sweet. I will stick to a traditional roasted turkey. Turkey itself was delicious, but all the pan drippings are a waste with the sweetness that is in there.

Turkey Bacon Breakfast Burrito

I really liked this. I'm sure with avocado I would have loved it but I didn't have avocado. I love cilantro so that is probably what makes this recipe for me. I added a little homeamade tomatillo salsa instead of regular salsa because I like more kick and I used homemade tortillas.
