Pumpkin Bread IV

Used Honey instead of sugar and applesauce instead of oil. Will add more cinnamon next time and half as much honey (using some sugar) to see how it turns out.

Always A Winner Grilled Chicken

Bland. Good for little ones but not for spice lovers. It wasn't horrible, one of our kids liked it but my wife and I go for spicy food and this wasn't it. While the medley of spices blended well, the honey was the most dominant flavor despite following others suggestions adding more garlic and our personal addition of more chili, chipotle and cayenne.

Sauce Rosee

Even my 3 year old daughter ate this! But I added 1/2 tbl of butter, reduced the white wine to 3 tbl, increased the red pepper flakes to 1 tsp and added 3 tbl each of grated parmesan and mozarella cheeses to the sauce.

Chicken Stir-Fry

Good, but not spicy enough. I added extra ginger, garlic plus some seasame oil but it still could have used some more kick. We wanted more veggies so added green pepper, snow peas and mushrooms. All in all pretty good.

Famous Butter Chicken

I didn't have enough butter crackers, so I also used pepperidge farm goldfish crackers to supplement. Really tasty!

Pumpkin Ravioli with Hazelnut Cream Sauce

This recipe is very time consuming. The butter it called for, never stated exactly where to put it, so we left it out. Also, the sauce never thickened. Perhaps needed corn starch? We were trying to create a dish we had at Wolfgang Puck's...not quite the same. But I still enjoyed the end result!

Southwestern Grilled Chicken with Lime Butter

I also thought the cinnamon was overpowering. I did not use the cocoa...which I am glad I left out. I added twice as much lime juice and also added garlic. Would still make again--with adjustments.

Garlic Top Sirloin Pot Roast

This was very good. The crockpot made the meat so tender--no knife needed...and how nice to come home and the meal is already cooked! Next time, I may use crushed garlic instead. I didn't taste much of the garlic flavoring using the slivers.

Italian Zucchini Saute

I added more spices (pepper, parsley, basil) than what it called for. I prefer lots of spice---not because I thought it lacked flavor. But I think I could have used less oil. The vegetables were bulky in the pan, which may be the reason for the quantity...but made it a bit oily as leftovers.

Best Carrot Cake Ever

I am not a fan of carrot cake...the 'vegetable cake' thought pops into my mind...but I made this for a coworker's birthday. I was pleasantly surpised at how well it turned out. I substituted the oil for applesauce and I think this helped keep the cake moist and less dense. It rose perfectly. I read some other reviews and added the cloves, nutmeg and allspice. It was delish!
