Annie's Strawberry Dessert

This was certainly a big hit at our dinner part last night. I used the suggestion to add 3/4 C of sugar to the crust and glad I did. I made my own glaze with recipe taken from Stawberry Pie I. Then mixed strawberries and glaze together before chilling. I think it tastes even better the next day. It certainly is NOT Weight Watcher friendly, but just have small portions -- it's worth it!

Jayme's Coleslaw

I have made this several times and it is always a big hit. You can modify easily to satisfy the palate for more tart tastes or sweeter. I reduce the vinegar to 1/4 cup as well as the brown sugar and leave the mayo as is. One hint: Don't use lite mayo. It is OK, but with real Hellman's, it's the real deal! Every bit as good as your favorite in a restaurant. We love it on a sandwich with pulled/BBQ pork.

Lentil Soup

I have never eaten lentil soup before, but we hit the jackpot with this one! Followed the recipe exact and it was perfect. In fact, I was almost done putting all the ingredients in when I had to make an emergency trip to the hospital and had my friend finish it. She said she thought lentils had a funny flavor, but "this soup is fabulous."

Shredded Beef Chimichangas

I took other reviewers suggestions and added some sauteed onions, garlic and 1/2 a jalapeno to the cooked, shredded meat. It was a little spicy, but pretty flavorful. I also added some shredded cheese to the mixture before makeing the chimichanga. It made 7 servings with approx. 3 oz. of meat for each. However, if you are looking for something that is "weight watcher friendly", this is not your dish. With reduced fat sour cream, it is about 13-14 pts.

Special Pork Tenderloin

This turned out to be a very elegant dish I would serve for company. I used (1) tenderloin that was a little over 1 lb. & did cut into 6 pcs as directed. However after the browning, I added 1/8-1/4c white wine and eliminated the apple juice & brown sugar. Used my homemade applesauce which is sweetened and has a slight cinnamon flavor. Also used about 1 teasp. of fresh grated ginger and about 1/8 c soy sauce and a small clove of garlic & 1/2 c chopped onion. Baked for about 45 min & this will be enough for my husband and I for 2 meals. Very moist, flavorful and delicious!

Tilapia with Creamy Sauce

Seasoning for fish OK. However, I completely changed the sauce as even using only 1 teasp of lemon juice way too much. I added about a Tblspn of lite Miracle Whip & maybe a teasp of sweet pickle juice & it was much better. Actually, I believe you could use dill in some tartar sauce and add about a Tblspn of cream cheese and that would work too.

Chicken Marsala Florentine

This was FANTASTIC! I used the dried tomatoes in the pouch -- no oil. Also reduced the quantity of them as my husband hates them. However, I used real Marsala wine from the liquor section & not the bottled in the grocery aisle. Also, reduced the butter substantially & substituted with chicken broth. Tasted like a goumet meal for company. Yum, yum!

Parmesan Orange Roughy

This was so quick & excellent with a touch of salt & pepper & fresh parsley to the breading. Also, I used only 1/4 cup of egg substitute & half the bread mixture. It came out crispy on the edges & very flavorful. It is now the FAVORITE orange roughy recipe over my stuffed one!

Spinach Chicken Parmesan

I did not like this dish at all. The chicken breasts wind up sitting in liquid & the breasts were soft and not flavorful at all. We thought the the only good thing was the creamed spinach.

Crab Stuffed Flounder

I cut the receipe down for 2, so was a little difficult to divide an egg! But, it was wonderful. I followed the recipe exactly, but added a little more melted butter to drizzle at the end. My husband said it was as good as any fish he has ever had in a restaurant. I'm sure that fresh fish & crabmeat from the fish market helped greatly. Will definitely make again with the mayo sauce.

Cream of Mushroom Soup I

This was a fabulous find! Great way to use up mushrooms & so rich and flavorful. I even cut the butter by one tblspn and substituted about 1/3 cup of 1% milk for half & half.

Red Cabbage

This was a fabulous recipe! It tasted like it came directly out of an authentic German restaurant. I used cider vinegar and reduced quantity to about 2/3 cup since my husband is not a fan of vinegar. He wasn't planning on eating it, but actually admitted he liked it! It is such a nice variation to your typical green beans, corn, peas, etc. & fairly healthy for you.

Elegant Zucchini and Tomatoes

The small amount of bacon really gave the zucchini a lot of flavor. I used fresh basil and added some fresh parsley. Great for all those zucchinis that won't stop growing!
