Melt-in-Your-Mouth Slow Cooker Chicken

When I first read this recipe, I thought the spices on the chicken were a very odd combo. This made me think this dish would be either amazing or terrible. It was amazing! The only change I made (accidentally) was I used cayenne pepper instead of peprika (whooops!), which gave it a really good kick. It was tamed down by the sauce and the pasta, so it wasn't overwhelming (this is coming from someone with a low tolerance to spicy foods!). Very very yummy!

Baked Teriyaki Chicken

Delicious! I only had 4 chicken thighs on hand and figured that was plenty since it's just me anyway. I kept the sauce amount the same, and there was just enough! I love mixing sauce in with the rice and veggies though. Only change I made was using garlic powder instead of cloves simply because I didn't have any. Didn't measure, just did to taste. This sauce definitely trumps any bottled sauce I've had, and made the chicken thighs so tender and juicy. Will certainly be making this again.

Quinoa and Black Beans

So yummy and so easy to make! I have to admit, I was terrified of trying to cook quinoa for the first time... I thought it would be difficult and time consuming, but I'm surprised at how easy it actually was! I read through some of the comments before attempting and made only two changes. I added red pepper in with the onions (gave it good color and flavor!), and only used one can of black beans. Advice to new cookers (like me!), just because it says let it simmer for 20 minutes does not give you the excuse to not check in on it! I think mine would have been done after 12-15 minutes, and at 17 mins some of the onion, pepper, and quinoa were a bit burnt on the bottom. Oops! Now I know for next time, and there will most certainly be a next time. Gave this recipe to a coworker and she's excited to try it this weekend!

Italian Turkey Meatballs

Made these a few times... they're excellent! I only omitted the butter spread and I don't think I missed out on anything. I made these much smaller that suggested, which means my baking time was much shorter. If you make them small, watch carefully! The last thing you want is some dried up meatball. Made these with my favorite pasta recipe and was very, very satisfied :)

Lance's French Onion Soup

So ridiculously simple yet SO GOOD!! Only two little changes - I added a bit of wine while cooking the onions (everything's better with more wine, right?), and I didn't add sugar to the onions. I used yellow onions and they ended being sweet enough on their own. Made some homemade croutons and added the cheese and OH MY GOD so good! I made this as an appetizer before a 9 hour pot roast... pot roast came out fine, but I would've been happy with just the soup :)

Slow Cooker Chicken Stroganoff

This was the first recipe I tried using my new slow cooker! Very delicious, but I did make a few changes as well. After reading the other reviews, I added the cream of chicken first. I also added 1/3 cup of wine. The sauce ended up being very thick (not a bad thing at all), but I am worried about reheating it. Next time I think I'll add a bit more wine and perhaps less cream cheese.
