So yummy and so easy to make! I have to admit, I was terrified of trying to cook quinoa for the first time... I thought it would be difficult and time consuming, but I'm surprised at how easy it actually was! I read through some of the comments before attempting and made only two changes. I added red pepper in with the onions (gave it good color and flavor!), and only used one can of black beans. Advice to new cookers (like me!), just because it says let it simmer for 20 minutes does not give you the excuse to not check in on it! I think mine would have been done after 12-15 minutes, and at 17 mins some of the onion, pepper, and quinoa were a bit burnt on the bottom. Oops! Now I know for next time, and there will most certainly be a next time. Gave this recipe to a coworker and she's excited to try it this weekend!
