Chicken and Corn Chili

Very good. I used pace picante sauce which is a thinner than salsa so I decided to add a can of tomatoes with chilis. It was good and flavorful. Instead of using the chili powder I just used part of a chili seasoning packet I had. It's very meaty, I used three good sized chicken breasts and it was very meaty with little broth. Still delicious though.

Campbell's Kitchen Tuna Noodle Casserole

My mom has been making this for years, she uses potato chips for the topping instead of bread crumbs and celery soup instead of mushroom. I feel the pimentos really add to the dish, wouldn't consider making it without.

Best Tuna Casserole

This is almost exactly my mom's recipe! Her's is awesome. The only difference is doesn't use onions and she uses cream of celery which I also prefer (I love mushrooms but don't care for mushroom soup), and adds a couple tablespoons of jarred pimentos. It's a good one!

Cold Tuna Macaroni Salad

It was good, I suppose I made too many changes to rate it. I didn't have tomatoes, used hard boiled egg and added sweet relish while omitting the sugar. I also used celery salt in place of fresh. I mainly wanted to try it for the italian dressing. It needed salt in the end.

Debdoozie's Blue Ribbon Chili

I just love this recipe! I love that it calls for salsa and two different style of beans. It tastes great and looks great and it's easy to make. This is one of the very few recipes that I felt was great as is. The only thing I do differently is I cook it in a crockpot with slow cooker chili seasoning.

Oven Roasted Red Potatoes

I looked a couple reviews, felt 450 was too high so preheated oven to 425. Then I decided to cut them into chunks just for personal preference, and to mix all the ingredients in the pan to cut down on it sticking the pan. As i was grabbing the soup packet I realized the exact modification planned to do was on the back of the box.

Best Brownies

These were excellent, better without the icing in my opinion. Honestly, I was blown away by how good these were. I've been trying out homemade brownie recipes for a long time and these are better than the box kind!

North Carolina-Style Pulled Pork

I made this using exact ingredients only I didn't have hot paprika so I just added some cayenne pepper, not much though to cut down on the spice. I doubled the sauce portion, as I know that NC style is more dry. It turned out to be the perfect amount, and it still wasn't as saucy as the picture. I didn't smoke it, cooked it stove top in a dutch oven covered, simmering about 4 hours. The first hour in water, saved some water for the sauce and sliced the meat. Then simmered the remaining time in the sauce until easily shredded with a fork, very good!

Restaurant-Style Potato Salad

This wasn't bad, I made it exactly as written omitting the carrot. However, the second time I made it, I left out the relish and sugar as well as the carrot.. I don't see the point of adding sugar honestly. Instead of just pimento I chopped up green olives with pimento inside, about a handful, and I added one hard boiled egg chopped up. This turned out much better, and my kids who normally hate potato salad loved it.

Sunday Best Fruit Salad

very good. I made this around this time last year choosing this recipe because several family members dislike fruit salad with the whipped cream/pudding/yogurt.... It was a hit, I could only find apricot filing, a smaller can. Planning to make again today with grapes.

Chocolate Chip Banana Bread II

I can honestly say this is the best banana bread I've ever had and I've been trying banana bread recipes for years. I used butter, and didn't realize I was out of eggs, so substituted mayo. Even with the extra mayo it was very good. I didn't have walnuts on hand but I love them so will be using them next time make. Excellent!

Too Much Chocolate Cake

Very good! Very easy as well. I made this cake twice the first time using mini chips and the second time using regular sized chips. I preferred the regular sized ones. They held their shape while still being gooey and I liked the difference in texture it gave the cake, they didn't sink to the bottom for me.

Easy OREO Truffles

I've made this a couple of times. I liked them better using chocolate chips rather than the baking chocolate, the bakers chocolate becomes fairly thick and hard after refrigerating. The chocolate chips thins out when melted and isn't quite so hard when refrigerating.

Brooke's Best Bombshell Brownies

These were very good, the first time I made them with part brown sugar and that was a mistake. They had a weird taste that didn't blend well with the overall taste of the brownie and made it gummy instead of fudge-y. I made them again with all white sugar and they were much better.

Just a note.. To separate the skin from the breast lift up the skin that covers the neck area and reach under the skin with your hand and work your hand in between the skin and the breast meat and that creates your pockets for the butter. No need to cut the skin.

Delicious Ham and Potato Soup

I love this soup it's the best!!! I have made it sooo many times. I use liquid chicken broth in place of the water and bullion. It's a bit thin so I mash some potatoes and add a handful of cheese.

Fluffy Pancakes

Very good! I added a handful of wheat germ and a mashed banana. Which tends to make pancakes dense but I figured these could handle it. They were still plenty fluffy. I used canola oil instead of butter.

Banana Pancakes I

These were not dense as I was expecting after reading some reviews. They were fluffy and airy, though a little on the thin side. There was a slight bitter aftertaste from the baking powder though.
