Salmon Cakes II

Yummy! I scaled the recipe for two, used 1 6 oz can of salmon, added about 1.5 tsp of mayo, 1 tsp of garlic powder, doubled the fresh parsley, and fresh lemon juice/salt/pepper before serving. Made a chile mayo sauce using approx. 1 part sririacha to 6 parts mayo. Incredible!

Carne Guisada II

This was a great base recipe. I tried this with a small pork tenderloin and cooked it for 11 hours in a slow cooker. I added a tsp of cayenne and chopped onions to the mix. Shredded the meat, stuffed in tortillas and topped with enchilada sauce and cheddar cheese. This made awesome enchiladas. Thanks for the recipe!

Burgundy Pork Tenderloin

I thought this recipe turned out really nice. My husband loved the sauce but thought the meat iteself was a little bland. Definitely worth trying this recipe. I cut wine in half, used beef broth for other half, and cut out onions and celery altogether. Still yummy, hubby's just too picky.

Slow Cooker Chicken Taco Soup

This stuff rocks and it's so easy! My only change is leaving out one can of diced tomatoes and chiles, but only because I don't have a big enough crock pot. Also, I use chicken broth instead of beer just because I don't like cooking with beer.

Never Enough Green Bean Casserole

I love this recipe! I make it for Thanksgiving dinner. I use two bags of frozen green beans for this recipe, fully thawed and well drained, and fresh mushrooms that have been lightly sauteed instead of the canned. When I'm feeling spicy I sneak in just a little red pepper flakes...but great without them too!

Pretty Chicken Marinade

As the creator of this recipe, it is very important to note that this recipe calls for low sodium soy sauce. Don't even bother attempting this if you are using regular soy sauce, it will be too salty. Update 7/2/08: I do not recommend making this recipe on the stove top. The marinade can't cook off enough when trapped in a skillet...stick to the grill!

Chicken Spaghetti II

I have a recipe that is very similar, except only using 10 ounces of velveeta instead. It seems like an entire pound would be too much. Also, to add a nice touch, crumble some cooked bacon into it or add fresh mushrooms (I do both).
