Black Bean Chili

It was alright. Just was missing something. Not sure what. My husband and I were thinking that perhaps some additional tomato would help or the addition of some kidney beans.

Banana Pancakes I

Really great. Made as written. Used thawed frozen over-ripe bananas which made incorporation into the other ingredients really easy. Next time, I'll replace the oil with apple sauce as I think that would work just fine.

Authentic Chinese Steamed Fish

We've never had rockfish before and I'm not sure I'll have it again. The smell of the fish is intense and leaves quite a linger in the house. The recipe or treatment of the rockfish was quite good (no changes) but I'll use this with another less intense smelling fish like tilapia or red snapper.

Eggnog from Scratch

This was fantastic eggnog. As a safety precaution, we tempered the eggs by first heating 1/2 of the milk and slowly pouring it into the egg and sugar mixture while whisking the eggs constantly. Then proceed with the cold ingredients (and vanilla). This will raise the temperature of the eggs so it is safe for children and pregnant women to drink. That being said, I also left out the rum and served it on the side : ). This received rave reviews from all! Thanks for sharing!

Blueberry Zucchini Bread

This recipe would be great as written and I will definitely be making as written if I give these as gifts, but for our household, I chose to make 12 muffins and modified the recipe to make them healthier. The modifications were as follows: Used a little less than 1 cup of the commercial Splenda/brown sugar mix (1/2 cup is equal to the sweetness of 1 full cup), used 3 cups of zucchini (squeezed of excess liquid), used 1 cup of whole wheat flour and 2 cups of nutri-flour (like normal all purpose flour but has a higher fiber content). I also used 1 cup of applesauce instead of the oil. Finally, I used frozen blueberries and tossed them in flour before folding them into the mixed ingredients. The muffins baked for around 40 minutes. These were great even with all the healthy modifications.

Bobbie's Oatmeal Cookies

These are by far the best oatmeal chocolate chip cookies I've made or had. They are really easy to make (my 5 year old helped me) and the batch is so large that you can easily only bake a fraction and keep the rest on hand for fresh baking when needed. I only made two changes to the recipe as written. I know many people who have 'issues' with raisins, so I substituted with craisins. I also reduced both sugars a wee bit, just because of personal preference. I don't hesitate to give it 5 stars because I know as written it deserves it. Happy baking!

Mini Zucchini Bread

This recipe was great. I also made some small modifications, but they were just to make it lighter. The recipe as written would be great. I just used all whole wheat flour, substituted applesauce for the oil, and used two cups of zucchini, and 1 tablespoon of molassas. It took the same time to cook. Really yummy and rich tasting. Even with the modifications, it was really moist and you don't miss the oil at all. Next time I'll try and substitute ground flax seeds for the eggs as I've done with success in other quick breads. Thanks for this one. It is definitely a keeper in a sea of zucchini bread recipes.

Megan's Granola

This recipe is great. I did modify quantities, using 10 cups of rolled oats (to match the size of the packaging), omitted the almonds, added unsweetened coconut, and increased the pecans and walnuts by 1/2 cups each, and wheat germ and oat bran by 1/4 cup each. For the wet ingredients, I largely kept the quantities the same. Instead of using maple syrup, I used sugar free E.D Smith syrup that uses apple juice concentrate and I increased the amount to accommodate for the extra dry ingredients. Once the granola had cooled, I added 1 1/2 cups of flax meal. Adding it at the end, rather than before the cooking process, keeps the nutritional value intact (breaks down in heat). Yummy, healthy and not too sweet. Thanks for this recipe Annie!

Lamb and Winter Vegetable Stew

We just purchased a slow cooker so I wanted to experiment with different stews and selected this recipe. The results were amazing. I reduced the beef broth amount to 1 cup, threw in everything, except the sour cream and flour, in the morning before work. Then when I got home, I made a 'roux' with the sour cream and flour and then tossed it in to the stew. My husband has ranked this stew as one of his all-time favourite dishes! A word of caution about parsnips. If you've never had them, they are highly flavoured and definitely influence the overall taste of the stew. If you like them, you'll love the stew as written. If you don't, just take them out and add more of the other vegetables.

Orange Almond Biscotti II

This recipe is great. I've made it a number of times and always with great success. When I've made it with cranberries, I've replaced the almond extract with vanilla. Also, there have been a few times where the dough had been rather dry, and in those instances, I've added the juice of one orange (usually the one I zest for the recipe anyway). Yummy. My husband has requested a copy of this recipe so he can make a batch whenever he has a craving for them (which is often).

Chocolate Chip Orange Zucchini Bread

The results of this recipe were great. Many rave reviews. I made 3 smaller loaves, but the cooking time was still around 50 minutes. I also replaced the oil with applesauce and it worked divinely! My only criticism (and its a small one) is that it was a little too sweet for my taste, but I was the only one who thought so! Thanks for this recipe. It'll be used every zucchini season from now on.
