Egg and Hash Brown Casserole

Great fast dinner. I cut back some on sausage and next time will add some of the salt to potatoes. My kids ate it with ketchup and loved it.

Sticky Apple Biscuits

Yum! Loved it! The only change I made was to bake it in a glass casserole dish. I hate cleaning muffin tins. It worked great but next time will probably try something smaller than a 9x13. Baked 19 mins.

Pumpkin Crumb Cake

WOW! The best dessert I have had in a long time! This is what I will make every time I want pumpkin pie but don't want the hassle. I made a few changes based on what I had on hand but would not make it any other way. 1. I used a spice cake mix. 2. I doubled the filling and used the 9x13 pan. A must if you want a more pumpkin pie type dessert rather than a bar cookie. 3. I had half a can of sweetened condensed milk in the fridge so I used it to replace the brown sugar. 4. I also baked about an hour because of the doubled filling. Trying it warm and YUM!

Tomato Zucchini Casserole

This is a great recipe on its own but I make a few changes when I want to turn it into a meal. I put leftover rice pilaf on the bottom of the pan. I then did one layer of each on top. I also added a 1/2c of light sour cream to the cheese mix resulting in a nice creaminess. Italian sausage would also be a nice addition. Oh, I also reduce the garlic as it is a little overpowering.

Easy Batter Fruit Cobbler

This is one of my favorite recipes passed onto me from my mom. It was a childhood favorite and is my go to recipe when company comes. It makes a nice soft cobbler with the most amazing buttery crisp edges. We sprinkle a bit of cinnamon/sugar over the top before baking and vanilla ice cream is a must topping just before serving.

Halibut with Zesty Peach Salsa

I was a little weary of the fruit fish combo at first but it was so yummy and its a great way to do fish! The fish is great alone and so is the salsa. A true sign of a great recipe. We also tried them as fish tacos which was good but I think I preferred it the original way.

Balsamic Roasted Pork Loin

Mmm, we loved this marinade! I had to make my own steak seasoning and added a touch of honey. I loved that it had a little kick to it but not overwhelming. Even my kids enjoyed it! Thanks for the recipe.

Very good, the vinegar is the key. We added about 1/2 tsp directly to our individual bowls. I also added a second can of clams, next time I would not do minced.

Zucchini Corn Fritters

My family loved these! I chose not to fry them but to cook them in a touch of olive oil, like pancakes. My kids loved dipping their "pancakes" in ranch (which I made with reduced fat sour cream, fat free plain yogurt and ranch mix) I left out the cheese but they tasted wonderful even without. I am sure these taste great as directed but chose to make a little healthier. We will be making these often during zucchini season!! * I have made these 4 times in the last 2 weeks. I now add chopped bell pepper, carrots and onion to the recipe. Great way to get kids to eat veggies!

Garlic Spinach Soup

Yummy soup. I did make some additions but had to give it the full 5 because my kids all ate it. I added carrots, green onions, mushrooms, and celery. I also added a bit of soy sauce, sesame seed oil, and sweet chili sauce for a kick.

Wow, so yummy! Moist without being incredibly dense. The flavor was the best banana cake I have had. Was very good w/ cream cheese frosting but really would have been amazing without it too.

Chocolate Chip Cheese Ball

What a fun recipe! I took it for New Years wanting something different from the other cheese balls and dips. Everyone LOVED it and asked for the recipe. It reminded me of graham crackers and cream cheese frosting. I rolled mine in crushed graham crackers and pecans. Yum. I think we will be having this every New Year's Eve.

White Almond Wedding Cake

I thought this recipe was a great way to improve a mix. It did make a more moist cake. However, it did still taste like a mix. I was hoping the additions would change the flavor more. I will experiment with flavors other than vanilla. Maybe lemon would be better.

Hearty Eight-Layer Salad

Great recipe for a layered salad. I loved the pasta in it. It worked great as a main dish for my family. Also, a great way to use up leftover Easter ham and eggs! The changes I made was to replace 1/2 of mayo for plain yogurt. I did not use salami and replaced the cheese with swiss. Loved the swiss in it. Even my husban loved this salad who swears he won't eat salads as a main course. Thanks.

Tex-Mex Turkey Soup

Great way to use up turkey. I added a can of diced green chilies to mine. I also added the salsa at the very end so it would not become to spicy for my kids.

Apple Pumpkin Muffins

Great muffins! Very moist, flavorful, and tasty. I think the recipe as is would make a great muffin but here is what I did different: I grated my apples and used brown sugar in the streusel. Things I will try next time are: a little less sugar, my apples were tart so I used the full amount but will cut back next time. I would love to try wheat flour next time. I will also replace at least half the oil with applesauce, there was a small pool of oil left in the bottom of my pan when I removed the muffin. Just don't think it needs that much. Overall, a really good muffin!
