Baked Zucchini Squares

Reviewed: Aug. 6, 2008
This is an easy and tasty recipe to use up zucchini. I grated the zucchini because it is faster. I microwaved the onion and oil for 4 min so the onion would soften. I used fresh basil, oregano and thyme. My husband really liked it! I will make again.

Awesome Slow Cooker Pot Roast

Reviewed: Apr. 9, 2009
This had great flavor. I cooked on high for 3 1/2 hrs so the roast was not as tender as I had hoped but I will cook on low next time.

Simple Hamburger Stroganoff

Reviewed: Jun. 13, 2009
I didn't think this had much flavor. It was really creamy but bland. I won't make again. It makes a lot, more than enough for 6.

Spaghetti Squash Casserole

Reviewed: Dec. 27, 2010
I like this recipe. I did not have mushrooms so I used 1/2 c of cream of mushroom/garlic soup. I also sauteed onion, garlic and spinach. I used panko crumbs instead of cubed bread. I will make again.

I never knew that scones were so easy to make! I divided dough in half and made chocolate chip and blueberry scones. The recipe made 16 scones for me.

Best Brownies

Reviewed: Feb. 3, 2013
My family loved these brownies! Delicious, fudgey and so easy to make. The only thing that I added was 1 tsp of chocolate extract and I mixed by hand. I did not bother with the icing. This recipe is a keeper!

Megan's Granola

Reviewed: Feb. 4, 2013
It was my first try with granola and I will use it as a base recipe. I changed quite a bit because I didn't have all of the ingredients but I wanted to try it. I made a half batch with the oats, 1/2C flax seed, 1/2C flax meal & 1/2 C wheat bran because that is what I had on hand. I also subbed pumpkin seeds, cashews and almonds for the nuts. I used cranberries, raisins and some chocolate chips after it cooled. I thought it was as good as any granola that I have bought. I baked @ 325 for 30 min and stirred every 10 min. It does not get crunchy until it cools. I think I would sub coconut oil for veg oil and add coconut next time.

Honey Wheat Bread I

Reviewed: Mar. 5, 2014
I made this recipe on a whim because I was out of bread. I used 3C wheat and 2 1/2 C AP flour. It turned out great. After reading other reviews I proofed in a 175 degree oven for 1 hour. The second proof only took 30 min using the same method. I used butter instead of shortening and added 1/8 C more honey. I can't wait for my kids to try it in the morning. I will try it with bread flour next time to see the difference.
