Mrs Espy's Enchilada Sauce

I'm only going to rate this a 3 for one reason. The recipe as listed is not very good. However, with the help of other reviewers - it becomes one of the best enchilada sauces EVER. First off, I used half California Chili Powder and half New Mexico Chili Powder (available in the Mexican food section of your grocery store in little baggies.) I used chicken broth instead of water, 8 oz. of tomato sauce instead of 4 oz, and added 1 tsp. oregano, 1 tsp. cumin, and 2 tsp. turbinado sugar. I made beef enchiladas and they were AWESOME! So don't be afraid to try this recipe - just doctor it up a bit!

Mini Meatloaves

I wanted to try this recipe for several reasons - it has a ketchup/brown sugar topping like the recipe that my husband prefers and it was highly rated. I would never have thought of putting OATMEAL and CHEESE in meatloaf! It was SO good. The thing that absolutely made this recipe the best was the texture - and I guess that is attributed to the oatmeal and cheese! The only thing I did differently was put a dash of garlic powder in and use my Pampered Chef Mini-Loaf pan to do four loaves. One suggestion for those who are finding it to be too "wet". Let the oatmeal/egg/milk mixture sit for a few minutes so the oatmeal can absorb some of the liquid before you combine with the meat. YUM! This is going to be my permanent meatloaf recipe!

Nanny's Spaghetti Sauce

At the last moment, I realized I didn't have any store-bought spaghetti sauce! OOPS! I found the recipe - one of the few that I had all the ingredients for on hand and WOW! What a great sauce! I didn't have time to simmer it for the full 30 minutes, but it was so tasty. Even my husband loved it. After we ate, I made a second batch and put it on to simmer and then freeze. Will be keeping this recipe!
