Blueberry Cornbread

Reviewed: Aug. 6, 2013
This was fantastic! I made it exactly according to the directions, and I had to stop myself from eating half the pan. I did use fresh blueberries, which I think makes a difference. Next time I will try it with a little less salt, but I don't want to mess too much with a good thing.

Cajun Chicken and Sausage Gumbo

Reviewed: Jan. 5, 2011
I tried this last night and it was a success! I wish I had cooked the roux longer. I was afraid that I might burn it, but the "chocolate milk" color was not long enough. I added some okra, which is a must for gumbo as far as I am concerned. I also threw in some shrimp at the end. A good authentic gumbo recipe!

Remarkable Fudge

Reviewed: Nov. 19, 2010
This is a delicious fudge, and turned out very nicely! It took me much longer than 12 minutes to reach 236 degrees, so make sure you use a candy thermometer if you try to make this.

Baked Kale Chips

Reviewed: Aug. 15, 2010
This is a fantastic way to eat kale (which I have a lot of in the garden these days!). I did not use as much olive oil and salt as the recipe called for, but instead just sprayed olive oil on until covered and salted to taste. Delicious. I will definitely be making these again! And 10-12 minutes was plenty of time to make them nice and crisp.

Cherry Chicken Lettuce Wraps

Reviewed: Jun. 5, 2010
These were nice and fresh, but they were missing something. I made them according to the recipe, but then after tasting them added the juice of 1/2 a lime. That really tied all the flavors together. Also, the sauce didn't really stay on the chicken. Next time we will probably let the chicken sit in the sauce longer - maybe for an hour - before serving. But I love the cherries!

Roasted Grapes and Carrots

Reviewed: Mar. 1, 2010
I definitely agree with the other reviewers that the carrots need to be pre-cooked slightly before baking. This simple recipe was nice, but needs a little something so I recommend adding a Tbsp or two of Orange Juice to the olive oil when you coat everything. This really makes the flavors pop! Also, try sprinkling it with a little sea salt and freshly ground black pepper, plus a bit of fresh parsley if you have it on hand. It just adds that extra bit of "wow" to the dish.

Balsamic-Glazed Salmon Fillets

Reviewed: Feb. 14, 2010
This marinade was good, but it did not have the *wow* factor. I will probably not make it again, as there are many other better marinades out there.

Spinach Salad I

Reviewed: Jan. 26, 2010
Salad was okay as is, but I agree there was WAY too much sugar in the dressing! Next time I'll just try 2 Tbsp. I also omitted the croutons. I think that with changes, the salad could be quite good!

Pretty Chicken Marinade

Reviewed: Jan. 26, 2010
This is now my dh's favorite marinade, and he is certainly a food critic! I usually make half the marinade for 4 chicken breasts - it is plenty and I don't like to waste ingredients. The only thing we do differently is to smoke some wood chips on the grill while cooking it instead of using the liquid smoke flavoring. I highly recommend that you try this!

Zucchini Brownies

Reviewed: Aug. 27, 2009
These were fine, but I'm not sure what the fuss is about. I thought the texture turned out a bit chewy, but not in a good gooey sort of brownie way. Tastes fine, but not amazing. I'll keep looking for a good zucchini brownie recipe.

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

Reviewed: Apr. 19, 2009
Excellent recipe once I tweaked it a bit. I added a small amount of julienned red pepper to the slaw mix, and wrapped everything up in corn tortillas. Also, I used thick plain yogurt instead of mayo - it gave just the right amount of tang to the chipotle "mayo" dressing. Delicious!

AMAZING. So flavorful and especially delicious with the glaze reduction. This has become our default steak marinade.

Chicken Noodle Soup

Reviewed: Apr. 5, 2009
Wonderful flavor! I boiled the chicken and used that as a broth base mixed with boxed chicken broth and 2 tsp chicken bouillon granules. I'm not sure how it would have been if I had just used the fake stuff, but I bet it would not be as tasty. I also added a little lemongrass for added complexity. It was the best chicken noodle soup I have made yet!

Lentil and Green Collard Soup

Reviewed: Mar. 30, 2009
This is an excellent soup, and while I'm no authority on Lebanese cooking it tasted fairly authentic to me. My hubby also loved it. I pretty much made it as-is except I only put in 1/2 the salt, sauteed half the garlic with the onions and put in the other half with the collards, and I steamed the collard greens instead of sauteing them in oil. I didn't miss the salt, and I prefer to use less if I can get away with it. I also used my immersion blender to SLIGHTLY blend the lentils before adding the collard greens and spices. This gave the soup a creamier texture, but I only did it for a few seconds as I didn't want to overdo it! I will be making this soup again.

Beaker's Vegetable Barley Soup

Reviewed: Mar. 8, 2009
Delicious! I adjusted the spices a little to suit my tastes (1/4 tsp black pepper and 1/4 tsp red pepper flakes instead of all black pepper, added 1/4 tsp marjoram), but for the most part made the recipe as-is. I used a quick barley, which made the cooking time a lot less. And I always saute the veggies in olive oil before adding the broth - it really brings out the flavors this way. Great recipe!

Taco Seasoning I

Reviewed: Feb. 22, 2009
I added 1/2 Tbsp. of flour before adding to the meat with 2/3 cup of water, as other reviewers suggested. I probably won't ever need to buy a premixed taco seasoning packet again, as this tasted much better!

Pizza Dough I

Reviewed: Nov. 25, 2008
I just made this as the dough for a Stromboli. I used EVOO for the oil, added 1 tsp. dried basil and 1/2 tsp. garlic powder, and it turned out really well. I used to use frozen dough, but this was so easy and tasty that I think it will become a permanent part of the Stromboli recipe!

Mediterranean Barley Salad

Reviewed: Jul. 21, 2008
This salad is okay, but I don't like black olives and I thought it was missing something. I substituted Kalamata olives for the black olives, used basil instead of cilantro, and added chopped cucumber. You can also add a can of garbanzo beans to make it a vegetarian main dish. We topped with feta cheese, for a real Mediterranean flair. With the modifications, it was great!

Fruited Ice Cream

Reviewed: Jul. 10, 2008
I made this without the fruit, and it was great, but I bet with fruit is good too. Ease of prep and the great flavor makes this my new standard recipe for ice cream!
