Michelle's Coconut Chicken Curry

Very good recipe, Michelle! This was quick and easy, and everyone in the family liked it. I did follow other reviewer's advice and added 1 tablespoon lime juice, 1 teaspoon cayenne and 1/4 cup brown sugar. Next time I will leave out the brown sugar (or only add a tablespoon or two) as I think we would prefer it without the sweet taste.

Ultimate Spicy Spud Soup

I thought this soup was very good, it just didn't 'wow' me. I re-sized it for 6 servings, then followed the recipe exactly. I agree with some others that the soup turned out too watery. And, despite the spiciness (which my family liked) it seemed to be lacking...something; I'm not sure what. Maybe next time I'll add some crumbled bacon. Overall a good soup, which I will probably make again.

Tuna Melt Sandwiches

Very Good! I thought these were better than several more 'elaborate' recipes for Tuna Melts that I have tried. The only change I made was to substitute several shakes of dehydrated onion for the fresh chopped; I'm not a big onion fan. Thank you for the easy and very tasty recipe!

Fettuccine Alfredo V

Oh, my. I had such high hopes for this recipe, but for me it was an almost complete failure. Even though I followed the directions EXACTLY, I ended up with a gloppy mess. The cheese (and I used good quality cheese, which I grated just prior to cooking)would not melt properly - there seems to be too much cheese in proportion to the liquid. My finished dish was oily from too much butter, with globs of cheese spread throughout the pasta. I have a feeling that even if the sauce had melded properly, I would have considered it too cheesy and buttery. Thanks for the recipe anyway, Greg, I see that the majority of testers loved it!

Connie's Zucchini "Crab" Cakes

Not being a zucchini fan, I really didn't expect to like this - but I did, and so did my family. No, it doesn't really taste like crab cakes, but it does come close! I pretty much followed the recipe, although I did add an extra teaspoon of Old Bay to the filling, and a teaspoon to the flour coating. I also increased the bread crumbs to 1 and 1/2 cups. After draining the grated zucchini, I squeezed it between paper towels to remove excess liquid, which worked well. I assembled these the day before and refrigerated them over night. They held together very well. I also thinly sliced a whole lemon, and sauteed it in the pan along with the zucchini. Very tasty! Thanks for the recipe; I'll be making these again!

Yummy Roll Ups

This is a wonderful 'last minute' appetizer, which I have served several times. Not only are they quick, easy and versatile, they taste good to boot! While probably not something I would want to serve at a more formal affair, among family and close friends they are always a hit. I do agree with another reviewer that the quality of the ingredients are extra important in a simple appetizer such as this.

Orange Sherbet Gelatin Mold

The first few bites of this gelatin mold were good; after that the heavy orange taste became a little overwhelming. I think it would be better with pineapple or another fruit added.

Hamburger Steak with Onions and Gravy

This is a very good recipe - great comfort food! I followed the recipe as printed, with two exceptions; I left out the sherry (didn't have any), and I substituted finely ground cracker crumbs for the bread crumbs. Both the meat and the gravy were, in my opinion anyway, perfectly seasoned. In fact, it is one of the few dishes I didn't add salt and pepper to once it reached the table! I rated it four stars instead of five because although quite good, I don't consider it outstanding, which is my criteria for a 5 star dish. But I will definitely make this again; thanks for the recipe!

Apricot Chicken I

I first tasted this many years ago, while my daughter was in pre school. Her teacher made it for a class party, using mini drumsticks, and everyone loved it, both kids and adults. However, it is a little too sweet for my taste to serve as an entree; just a few bites satisfies me. So I sometimes serve it as an appetizer at parties, using small chunks of chicken simmered in the sauce, and it is always a hit!

Coconut Macaroons III

This recipe just did not work for me. Since it received so many rave reviews - and is a blue ribbon winner - it was probably my execution that was off. Although I tried to follow the directions exactly, the macaroons came out rather brittle. I was also quite aware of a 'floury' taste. I will be trying this again, however, and I will take the suggestion of others to lower the oven temperature a bit.

Quick and Easy Chicken Noodle Soup

This is a very tasty basic recipe - however, I did make a few changes, based on personal preference and availability - Other family members do not like oregano, so I reluctantly left it out. I didn't have any celery, so substituted a few shakes of celery seed. I added one fourth cup of minced green bell pepper, which I sauteed along with the onions, in addition to three minced garlic cloves. I also used all chicken broth, but next time I will make sure to have some vegetable broth on hand - sounds good! And, I used two cups of noodles. As other reviewers have mentioned, the prep time was a bit longer than expected, so I am going to chop up my desired vegetables in appropriate amounts and freeze. With leftover or store bought cooked chicken this soup will really be a breeze! - Don't omit the basil, it really adds to the flavor!

Chicken Rice Casserole

This is pure comfort food, and a dish that I would be proud to serve to both family and company! I have made this several times, and I can count on it always turning out great. I followed the recipe as printed with two exceptions - I substituted slivered almonds for the water chestnuts, and crumbled potato chips on top instead of crackers - just personal preference. Thanks for the great recipe!

Spaghetti Chicken Casserole

I really enjoyed this dish! I did make a few changes, though, based on others' suggestions, and what I had on hand. I added a small can of sliced mushrooms - no pimentos, because I didn't have any. I sauteed the onion and bell pepper before adding. I didn't have any wine, so used 1/2 cup of cream instead. I also used the suggestion to sprinkle the top with Parmesan cheese and crushed corn flakes during the last 15 minutes (I mixed all of the cheddar into the casserole). It was a little too dry for my taste, so next time I will add the wine in addition to the cream, or use more cream or milk. A great basic recipe that can be fiddled with to suit your own personal taste!
