Baked Zesty Carrots

I tried this recipe exactly as printed. I did not like the "mushiness" of the pre-cooked carrots, and the horseradish level was a little high for me, and I like sparky! I did like the idea of adding cream to the mixture, but I added a little less, so the dish would not be too "soupy".

Zesty Carrots

This is great! It is tasty and zesty. I used the full 2 tablespoons of horseradish; use less or more to your taste. I have tried similar carrot recipes, but this one was the best. I think the julienning makes a difference - I just used my potato peeler to "julienne" the carrots. Thanks Chef-Jeff!

Tuna Casserole III

This is a very basic tuna casserole recipe. Good (for family) on its' own, it does improve with the addition of one or two traditional vegetables - peas, broccolli, etc. I like to add noodles to make it heartier, and also an egg or two to give it that 'custard-like' consistency. - If you didn't like this in the grammar school lunchroom or at grandma's house, you may not like it any better now, but with a little imagination you can transform the base recipe into something quite pleasing to you and your family. Famous Butter Chicken

Wow, Haulbur, way to go! I do agree, however, that the cooking time should be decreased for maximum tender and juicyness. This is a 'casual' recipe that I can whip up quickly for unexpected company, leaving them thinking that I just have a natural knack for cooking. - I rate recipes by how they taste - not their 'health attributes' - I do know not to overdue it with the higher cholesteral dishes. So, as far as taste accounts, this recipe is a real winner, and I would proudly serve it to family and friends alike! Thanks for pointing out that simple additions can make a BIG difference!

Pastitsio

This was very good - but I am still searching for the perfect (IMHO) Pastitsio. My husband and the adult step-son raved about it, but my finicky taste buds still compare it to the first and best Pastitio I ever tasted, in a popular local Greek restaurant - it was made with hamburger also. I suspect they probably catered somewhat to American tastes, so my frame of reference is most likely a little skewed. However, I think I trust others taste buds a bit more than my own, and this has never failed to please. Thanks for submitting the recipe, Eleanor!

Meatballs with Mushroom Sauce

I grew up on dishes like this, and this recipe is very similar to one my grandma (just turned 100!) used to make for us grandkids when we would spend the weekend. The only change I made per grandma's way was to use only to use only 1/4 to 1/3 cup water, so I didn't dilute that wonderful evaporated milk 'taste'. I also added pepper and a little salt to the sauce. Grandma doesn't cook anymore, but I recently made this for her, and she considers it (almost) as good as hers, which is saying alot! Thanks for reminding me of this homey and so tasty old-time recipe!

Lemon Chicken Piccata

Oh, my, this is good! And, it is so foolproof it is almost guaranteed to come out good every time! I followed the recipe, except for two small changes; I didn't add garlic because I was using garlic infused extra virgin olive oil, and I didn't add the lemon slices, although that sounds quite good. The lemon flavor is just right, not too faint and not overpowering. Try it! You will be glad you did.

Cindy's Tasty Wings

These wings and sauce are very similar to a recipe my daughter's kindergarten teacher made for parties. It was a hit with the kids, and most adults too, although it is not something I would want to eat as a main dish, as I find it a little too sweet for that. But it is a great party food (with napkins!), and easy, too!

Contrary to most other reviewers, I did not much care for this. It was a lttle tangy for my taste, I have had other Picattas that had a mellower lemon flavor, which I prefer.

Baked Ziti II

Oh my, this is delicious! I halved the recipe for the two of us (there were still plenty of leftovers) and used slightly less than half the riccotta cheese. I also put a layer of mozzerella on the top. It tasted even better reheated! This one wll go in my permanent recipe file! Thanks for the recipe!

The Best Meatballs You'll Ever Have

I made these meatballs exactly as stated. They are quite good, but not the best I have ever tasted. We ate them alone; they were flavorful enough to do that! Next time I will try them in a meatball sandwich with pizza sauce and mozzerella cheese. The texture (soft inside) is different than I am used to, but definitely not dry. We did not think they were too spicy - they could even use a bit more spice if used as an appetizer. Thanks for the recipe!

Cream Cheese Jalapeno Hamburgers

I loved this more with every bite! The cream cheese makes it so juicy and flavorful! I downsized this for two people; 1 lb. hamburger, 4 oz cream cheese, and about 5 canned chopped jalapenos (I didn't have fresh). Next time I'll add more jalapenos. I'm not sure that someone who didn't know would realize it was cream cheese in the middle; don't tell them and see if they can tell! I am going to try this as a sandwich spread (slightly warmed) too! Thanks for the great recipe!

The Best Meatloaf I've Ever Made

I made this recipe exactly as printed, and am giving it 4 stars mainly because of it's incredible moistness. It tasted good too, but I thought it was rather bland; next time I think I'll add mushrooms and diced bell peppers, maybe adding a little more sour cream to keep the 'solids to liquids' ratio. I also thought it was too salty, with the crackers and added salt. Now,my personal preference remarks aside, this is a great recipe, which I will make often, with adjustments to suit my own taste!

Tamale Casserole

This is great for a quick and hearty family main dish. I used corn chips (Fritos) because that is what I had on hand; I also used chili with beans. This took 5 minutes to throw together, and only 25 minutes to heat through - fastest meal I have made in a while! I served with sour cream and flour tortilas on the side.

Apple Crisp III

I don't know if it is really fair that I rate this recipe, because I didn't make it exactly as printed. Anyway, here goes. I followed the suggestions of others and used half brown and half white sugar. I also sprinkled the cinnimon throughout the apples, rather than on just on top. And, I mixed in some raisins and pecans with the apples. The topping was doughy, so I just picked pieces off and lay them on top of the apple mixture. The topping was delicious, but not crumbly, as is usually associated with apple crisp. It would have been better if I had used more apples than the stated amount; they shrank down. This was tasty, but I think I will continue on my quest for the perfect apple crisp.

Ground Beef Stroganoff

It may not really be fair for me to rate this, because I didn't follow the recipe exactly. I used 1 cup of sour cream and eliminated the mayonnaise entirely; I have never heard of mayonnnaise in stroganoff. I kept everything else the same. I thought this was very bland, and too runny. But, who knows, maybe if I had included the mayonnaise I might have liked it better.

Traditional Salisbury Steak

Excellent recipe for Salisbury Steak. Mild and savory in flavor, with tender, moist patties. Although I love spicy foods, this is not a dish I would try to 'spice up'. Salisbury steak is not intended to be heavily spiced. Thanks for the great recipe!
