Cottage Cheese Roast

I cut this recipe in half, used chopped pecans as I didn't have any walnuts and only used a tsp. of olive oil in place of the vegetable oil. It ended up needing 50 minutes to bake.It was so amazing, I couldn't quit eating it. Next time I'm going to try it with chopped cooked spinach and carrots.

Pretty good, but the onion soup mix was a little overpowering. Adding a ketchup based glaze helped some.

Bacon Wrapped Water Chestnuts III

Made these for 4th of July and there were NO leftovers! I did have to bake them about 15 minutes longer to crisp them up, but the sauce was perfect. I think my Father-in-law at 20 of them!!

World's Best Bacon Cheese Dip

Made this exactly as directed for 4th of July and everyone gobbled it up! Next time though, will probably add a couple more slices of bacon, a little garlic and perhaps chop some pickled jalapenos for more kick. Really easy to put together.

Spicy Grilled Shrimp

We made this last night without the salt. You absolutely do not need it! This was so good - we kept sneaking back into the fridge to eat the leftovers. I can't wait to try it as a filler for shrimp tacos. Thanks!!

Grilled Vidalia Onion Soup

This was great, easy and really tasted like french onion soup! Used chablis as I had no sherry - I think red wine would work as well. Will do again.

Spicy Bean Salsa

I make this with a can of Rotel instead of the tomatoes, add drained sliced olives and use green onions instead of regular onion. I also use fat free zesty italian dressing. My family likes this as a side dish as well as a dip. Even my extremely picky son is addicted to this!
