Baklava

Loved it! I also added golden raisins soaked in sherry for 1h, and for the 1 pound of nuts I added 1/2 pound of pecans and 1/2 of pistachios. However, the sorbet (it's not really called sauce, this is baklava) was not enough. I made twice the amount so the baklava was nicely moist when we tried it (the baklava is not suppose to be a dry dessert, but quite moist even soaking in sorbet. Ask any Arabian or Turkish baker).

Eggplant Parmesan II

Nice recipe. The taste is good, and my husband loves it a lot. I feel I should've baked the eggplants a bit longer than 5 minutes on each side, because some of them ended up being "raw" even after all that baking at the end. I would definitely use much less bread crumbs too, like 3 or even 2 cups instead of 4. I ended up throwing almost half of the amount because I wasn't able to use it again (got a lot of beaten egg mixed into the whole amount).

Chef John's Blueberry Muffins

I really like these muffins and the extra blueberry "kick" to them. But, I thought they were rather dry. I would probably add on a bit more sour cream or milk. They are definitely worth the experiment.

Great as a side dish or if you eat lots of salad with it, works great with sour cream as well. On its own the taste is a little bland.

Vegetarian Mexican Inspired Stuffed Peppers

I like this recipe a lot mostly because it allows lots of changes in the stuffing, and the pepper will always balance whichever flavor. Next time I will try to add jalapeños and see if I like a spicier stuffing.

Seven Grain Bread II

Tastes great! Instead of the 7 grain cereal, I added 1/2 cup of fine chopped mixed nuts and seeds like: raw pumpkin seeds, roasted and salted "pepitas" pumpkin seeds, raw sunflower seeds, almonds, and pecans.

Vegetarian Korma

I really like this recipe! I used a pot instead of a skillet for easier stirring. I added some water while I was cooking the potatoes and carrots, because the potatoes took a while to get tender. Every time it seemed like there was a risk of burning them, I would add a little bit more boiling water in the pot. I also added 1 cup of plain kefir together with the tomato sauce to balance the flavor. It really tastes great and my husband and I loved it!

German Apple Cake I

The cake is absolutely fantastic! I used all ingredients written in the original recipe and did not change anything. It is really easy to make. I love the spongy taste and the fresh apple "kick" it delivers. I used confectioners sugar on top and it tastes wonderful. I will definitely make it again.

Coconut-Lime Cheesecake with Mango Coulis

Fantastic! I love the mix of each flavor. The mango puree can really be any other thick in texture fruit, if you are not into the blunt mango taste. The mango can be mixed with lemon or orange for a fresher, more sharp taste. I changed the gingersnap cookies with "Nilla" cookies, and that worked great for us! I will definitely make this again.

Ian's Potato-Vegetable Soup

I am appositely blown away by the taste of this soup! So rich and just wonderful. I didn't find cream of celery soup so I relaxed it with cream of mushroom. I added fresh finely chopped parsley instead of dry (I like the fresh taste better). I also mashed the vegetables after they boiled (right before serving). This recipe is definitely a keeper!

Apple Raisin French Toast Strata

The recipe turned out really good! My mother-in-law and I made it for Christmas morning. It tasted fantastic! I feel that replacing the apples with another fruit would go really well too, like for example: blueberries, strawberries, pears even? Wonderful recipe.

Raspberry and Almond Shortbread Thumbprints

It lacked richness in flavor. The shortbreads were edible, looked presentable, but the taste was way to sugary and not very good. Suggestion: Maybe very fine crumbled almonds or pecans in the dough could add for a better flavor? I am guessing: 1/2 cup of fine crumbled almonds + 1 cup of flour (instead of 2 cups of flour).

Gourmet Mushroom Risotto

Yes, I do think the amount of mushrooms is way to big. I used less, about 3/4 pound of each type of mushroom. Also, since I am a vegetarian I switched the chicken broth with a vegetarian one. Turned out great! The recipe is absolutely DELICIOUS!! I really love it and most importantly my husband does too. :)

Tomato-Cream Sauce for Pasta

Really good sauce! I was trying to copy a similar sauce my husband and I tried at an Italian restaurant, and this is really close to it. The sauce in the restaurant was a little bit thicker, my guess is that they add flower in it. But, this sauce is also really, really good. We ate pasta with spinach, but would've worked even better with, like, cheese ravioli? Love it!
