Downeast Maine Pumpkin Bread

Absolutely fantastic and made some variations that were previously suggested in the quality reviews sent in by tried-and-true cooks/chefs :) I added cranberries (1 cup of diced fresh) and 2/3rds cup orange juice. Superb! I use applesauce and unrefined coconut oil! Fresh nutmeg, cinnamon, and ginger from the health food store. WHAT A DIFFERENCE. With the number of ratings and the high regard for this recipe and my absolute passion for anything PUMPKIN I was compelled to try it out. My children raved so much at school about my bread that I had teachers and other staff asking me to make it and they'd pay for the ingredients! So I did. Now I got rassled into doing a home ec. demonstration and presentation.......lol. All is good :)

Armenian Rice Pilaf

I am the original poster and half Armenian. This pilaf recipe is a rather plain one but this is this recipe for regular chicken rice pilaf. There are many different kinds of pilaf....some that call for oysters and pine nuts, some call for currents and many diverse seasonings. If you choose more adventurous recipes of pilaf please research PILAF in different middle eastern STYLES! For authenticity please consult the internet at credible websites and then verify and verify.

Blueberry-Pecan Crisp

I tried this recipe for the first time yesterday evening as a carry-in for some friends and I was concerned that it was going to be too sweet or just not a really quality dessert but as it turned out it was fantastic! I didn't add the nuts because I didn't have any on hand and I found it not necessary. I will certainly make this again! Everyone raved about it and it was the simplest dessert that I've ever put together. I do suggest to use REAL butter and to make sure you distribute all of the ingredients evenly throughout the pan. Let this get a golden brown on the top and if you choose to serve this just warm it will still be delicious. We served this in small bowls and poured some milk in with it. It stayed warm for hours after it came out of the oven. Next time I will serve it warm but with vanilla ice cream. It makes a large 9x13 pan and even with ten adults there was enough for all of us. As the Amish say "this was definitely 'more-ish'" :)

Cranberry Orange Bread

I recommend this recipe even for restaurants and bakeries. The moisture, consistency, flavor and affordability of this "bread" is remarkable. I make these and give them as Christmas gifts as well as store them baked in my freezer. Sometimes it's good to pre-slice them and wrap individual pieces in plastic wrap then put into a freezer bag so they'll stay fresh and you can thaw one piece at a time to save on wasting them.

Tomato Zucchini Casserole

Absolutely delicious! My bunch of teens and one from the neighborhood all dove into this before I could put it on the table for supper. LOL Found them standing around the kitchen counters with bowls of it........hey, why not :)

Andrea's Pasta Fagioli

This is absolutely one amazing recipe that my children beg for as soon as the weather starts to cool down. I do however make a few changes that do effect the taste and appearance. I sauté Italian loose sausage as well as 2parts ground round. For color and nutrition I julienne carrots as well as sliver my onion into long thin strips. Absolutely delicious! Thank you for the inspiration :)

Cauliflower-Cheese Soup

I found a fantastic price on cauliflower this week so I bought two heads. I will certainly be buying it more often after trying this recipe for the first time. I cooked 2 full heads together after removing the green and the core. I simmered them doen till thdy were very tender. I then added sea salt, black pepper, onion, fresh garlic, chicken stock gells 4) some thyme, parsley etc.this came out fantastic! And I made almost a stockpot full. It is soooo good!
