Awesome and Easy Creamy Corn Casserole
I made this one evening when I was trying to just make something healthy for the kiddos to snack on for that day and also accompany a late brunch I had planned. I served it with a quiche and some garden salad. The kids asked me to please make it again. I have SOOO much canned corn both creamed and whole kernel and I have bags and bags of corn bread mix from a friend who closed down her store and didn't see a big use for them. So for me not only is this delicious but so economical as well. The flavor of the dish was exceptional. I found it to be more like a souffle and had a very light, non overpowering on flavor. Almost French cruller ish. I'm making a double batch in about 10 minutes. :)

Easy Crustless Zucchini Quiche
Excellent excellent excellent!! My very picky teens (the 4 of them) gobbled this up so fast that I am glad that I made two extra pie shells because this is a fantastic meal that everyone LOVED. I will certainly put this in our family favorites list of regular recipes to be served. I love how I was able to make this in the early morning and then all day they were "in it" Everyone prefered it cold too...... Thanks again for the great recipes!

Downeast Maine Pumpkin Bread
Absolutely fantastic and made some variations that were previously suggested in the quality reviews sent in by tried-and-true cooks/chefs :) I added cranberries (1 cup of diced fresh) and 2/3rds cup orange juice. Superb! I use applesauce and unrefined coconut oil! Fresh nutmeg, cinnamon, and ginger from the health food store. WHAT A DIFFERENCE. With the number of ratings and the high regard for this recipe and my absolute passion for anything PUMPKIN I was compelled to try it out. My children raved so much at school about my bread that I had teachers and other staff asking me to make it and they'd pay for the ingredients! So I did. Now I got rassled into doing a home ec. demonstration and presentation.......lol. All is good :)
