Duck Legs in Green Curry

We loved this! I used leftover duck so it was already cooked. I substituted lime juice for the kaffir lime" and did not add hot peppers. Also I used curry powder. I also added a bunch of veggies. This is a GREAT flavor for duck! The second time I made it I did it in a crock pot and I think it came out even better!

Stuffed Acorn Squash II

make it your own! so versatile - just use what you've got. I grow patty pan and zucchini in my garden. I use brown rice, ground beef, onion, veggies (cut up squash that you cut out), pasta sauce and top with cheese. Perfect!

Hawaiian Tarts

Easy and yummmm! I used normal size muffin pan and it worked just fine. Shape dough like a shallow cup inside the muffin well and put filling inside. No problem removing from pan - I sprayed with cooking oil spray before I put the dough in.

Eggplant, Roasted Pepper and Chicken Pitas

Reminded me of the flavors I had on my Mediterranean vacation - "Mezze" platters in Turkey. Also, try adding artichoke hearts and feta. If your artichoke hearts/roasted red peppers are marinated, you don't need to add much more of your own seasoning. I don't know why reviewers are saying to use red wine vinegar, balsamic is accurate.

Easy Crab Linguine

I read the other reviews about the sauce not being rich or thick enough, so I substituted about half heavy cream and half milk, I added a bit more garlic, parmesan (the real fresh stuff not the kind in the shaker can), and added some pepper and LOTS of Old Bay Seasoning. It was almost too thick so I added more milk. VERY delicious! I loved that this was sooo easy to make! I also found that it was more than enough for 6 people, I would say it should easily feed 8 people.
