Cuban Ropa Vieja

This was really good! Just as good as most of the little Cuban restaurants around here (better then others), and I live in Miami. The recipe was simple, I had most ingredients on hand. The only thing I did differently was to use half a green and half a red bell pepper since that's what I had in the fridge. I served this with some black beans and rice and it was a great dinner. This made plenty so I already know what's for dinner tomorrow. :)

Pasta Siciliano

This was amazing! I made this for my husband and myself for dinner during the week, and it was super easy and so flavorful! I had some leftover and had no problem eating this for the next 2 days! It was quick, easy, delicious and tastes just as good the following days as it did straight out of the pan. I see this in the regular rotation! Add a simple green salad and it's the perfect dinner!

Ginger Glazed Mahi Mahi

I made this over the weekend and it was so easy and very tasty! I'm not a big fish person, but I've been trying more fish dishes and this was a winner! Hubby devoured it and wanted more! Served w/ coconut rice and green salad. Excellent!!!

Lime Chicken Soft Tacos

These were REALLY good chicken tacos! DH and I loved them! They were easy to make and there wasn't anything left over. They're a great change from the same old tacos!

Pollo Fajitas

Very, very, very good fajitas! Very easy to make as well. I marinaded these and grilled them and they were amazing! Hubby said he doesn't have to get fajitas from Chili's anymore... ;o) I didn't have a problem w/ the soy sauce at all. I used low sodium and found the chicken to be seasoned perfectly. Most chain resturants use soy sauce in their marinades as well. So if you like Chili's or Hard Rock Cafe's fajitas, you'll like these. This is in the monthly rotation from now on.

Greek Chicken

Very good chicken dish! This was a nice change of pace. Healthy and easy! This is now in the rotation! I served this w/ a tortellini salad from this site and hubby always asks for more.

Slow Cooker Chicken and Dumplings

I've made this a few times now and every time it's been excellent! Very, very easy! I added carrots and celery, otherwise followed the recipe exactly. I use the Healthy Request Cream of Chicken soup to cut back sodium/fat and it's great! This always comes through when it's been a long week and DH and I need comfort food!

Ali's Greek Tortellini Salad

This is a simple yet delicious pasta salad. My husband and I LOVE it! I always make extra to take for lunch the next day. Goes well w/ greek chicken from this site. Great flavor and easy to make, you can't ask for more!

The Best Sweet and Sour Meatballs

This was really good and a lot easier then I thought it was going to be. Sometimes meatballs can be a bit of a mission, but this was easy and tastey! I added garlic powder and fresh grated ginger to my meatball mixture and I think it really gave more flavor to the meat. I used lean ground beef and the meat came out a little dry. Next time I'll probably try meatloaf mix as some other members have suggested. This is going into rotation for sure! My DH doesn't really groove on sweet stuff for dinner, but he really enjoyed this!

Onion Pasta

A friend of mine actually told me about this dish and I've had it on hand every since. This has such a simple, yet comforting flavor! It take some time to carmalize, but it's worth it! Serve w/ grilled or sauteed chicken w/ a salad and you're set for a great dinner!

Hawaiian Chicken Kabobs

This chicken was delicious. I've made this several times, even for guests, and everyone always loves it! My husband and I went to Maui for our honeymoon and this reminds us of some of the chicken we had in Hawaii. It's quick, easy, tasty and healthy. Can't go wrong w/ that. Try serving this w/ Fried Rice w/ Cilantro also on this site. Makes a perfect meal!

Fried Rice with Cilantro

This was excellent! So easy to make, took no time and everyone raved about it! I highly recommend this for anyone who wants to change things up! I didn't add egg as other reviewers mentioned, but next time I think I will. (Note: if you make rice, make extra. Leftover rice makes this quicker and easier.) I didn't add chicken, I paired this w/ Hawaiian Chicken Kabobs from this site and it was AMAZING. Hubby loved it!

Chicken Milano

I made this dish one night after work and this is going into the regular rotation! It was quick, easy, and most satisfying! I'm ready to have it again and I just made it two nights ago. There weren't any leftovers... I didn't follow the preparation methods word for word, it seemed like a lot of unnecessary steps. I just browned the chicken in a large pan, removed the chicken and made the sauce in the pan and tossed everything together. As long as you wait until the LAST minute to add the basil, everything comes out fine. There are also so many options to add to this. 5 stars all the way around!

Easier Chicken Marsala

This dish was so easy to make a had such great flavor! I think it's important to use a good Marsala wine, not the Marsala wine labeled as a "cooking" wine. The only change I made was to add a bit of onion powder and parmesan cheeze to the chicken coating. Turned out wonderfully! I served this with mashed potatoes and steamed broccolli and carrots. I will be making this again for sure!
