Lemon Poppy Seed Muffins I

I used half the amount of poppy seeds (still plenty), and used plain greek yogurt instead of lemon yogurt. I increased the amount of shredded lemon peel to compensate and they turned out delicious. I didn't even bother with the glazing, they were nice and moist on their own.

Classic Rice Pilaf

This turned out PERFECT, my husband keeps asking me to do it again. I halved the recipe (because it's just two of us and 2 cups of rice is a lot), but I kept the amount of onions the same. Excellent flavour and perfect consistency.

Kalamata Olive Tapenade

I used fresh basil instead of parsley and it turned out really good. I also added a table spoon of plain greek yogurt, to make it a little richer. Had some friends over and they didn't leave much of it left in the dish, so it seems they liked it!

Hashbrown Casserole

I made this for a group of friends coming over for dinner and for father's day (the next day). So I doubled the recipe, and made two casseroles at once. My friends and my family all loved it and asked for the recipe afterwards. I made a few changes to it: instead of onion flakes, I minced real onions and sauteed them until golden brown (about 1 large onion for two recipes). I also substituted the sour cream for greek yogurt (plain). The consistency is exactly the same, the flavour is very close, but greek yogurt is WAY healthier. Also, instead of corn flakes I used Panko bread crumbs on top. It turned out delicious, and I'm definitely doing this recipe again.
