Peach Cobbler

Reviewed: May 27, 2012
I wasn't sure how good this was going to be since I only had a frozen mixture of peaches, strawberries, mango and pineapple... but it was so yummy. The batter was very runny and I wan't certain it was going to cook properly but it did. I think I had to leave it in for an extra 5 minutes or so. I used a little more fruit than called for and I also added a little bit of cinnamon. Can't wait to make this with blackberries.

White Chocolate Chip Oatmeal Cookies

Reviewed: Apr. 20, 2012
Not bad, but a tad plain tasting. I think maybe some cinnamon might be nice. 3.5 stars but I don't know if I will make them again, I wouldn't mind trying them with butterscotch chips. I baked for exactly 12 minutes and they were the perfect chewy consistency.

Mike's Signature Pretzel Bread

Does baking soda and water make crack? Because this bread is addicting! And I finally found a bread my carb hating husband likes. Wish I would have listened to other reviews and doubled this.

Pizza Dough I

Reviewed: Apr. 11, 2012
This wasn't terrible but not what I was expecting in a pizza dough. Very easy to make but was hard to spread in my pan and didn't cook well. My cheese started getting too brown before the crust was ready.

Mini Pineapple Upside-Down Cakes

Reviewed: Apr. 9, 2012
I made these in large muffin tins and just used the whole pineapple ring. I also added the cherry before adding the cake mix. Somehow I managed to use too much butter and the top wasn't as crusty as I would have liked, but they were still yummy.

Sweet Dinner Rolls

Reviewed: Apr. 9, 2012
This was my first time making rolls and I was surprised how easy it was. I followed MommyFromSeattles tips and also made cloverleaf rolls. I had enough dough to make exactly 12 rolls in the larger muffin tins. I used 2 1/2 tsps of Rapid Rise yeast. Next time I think I will take these out after 10 minutes of baking. From MommyFromSeattle: "I made cloverleaf rolls and baked for 12 min. exactly. Soft, moist, tender and flavorful. I used rapid-rise yeast (which only requires one rise) and had these on the table within 2 hours. No changes needed - amazing! TIP - I make this by hand using Rapid Rise yeast (aka Bread Machine yeast). I warm the water to 110-120 degrees and add to the yeast and sugar in my KitchenAid mixer. Let stand for 10 minutes until foamy (same for any type yeast). Then I add the warm milk, melted butter, salt & egg and mix well with paddle attachment. I then add the flour one cup at a time. When dough comes together, switch to dough hook and knead for 5 minutes (6-7 min. if doing it by hand). I cover the dough and let sit in my bowl to rest for 10 min. then I shape into rolls and let rise for 1 hour."

I liked these because they weren't too sweet. Nothing super fancy about them, just simple and delicious. Exactly enough batter to make 12 regular size muffins.

Creamy Au Gratin Potatoes

Reviewed: Jan. 8, 2012
Creamy, rich, cheesy, PERFECT! I made as written although I did use a 2qt. casserole dish and it fit perfectly. I might chop the onions next time and just add a small amount. Flavor of the onions was great but I wasn't crazy about the large pieces. I'm afraid I'll have to throw out all the leftovers to avoid eating the rest for lunch tomorrow.

Peanut Butter Frosting

Very light and fluffy with a mild peanut butter taste. Make sure you beat until nice and fluffy. I only added about 2-3 Tbsp. of milk. Be sure to add a little at a time for the perfect consistency.

Super-Delicious Zuppa Toscana

So yummy. I do think next time I make this I will use kale instead of the spinach, I thought the spinach ended up a little slimy. I added a tad more than the 1 cup of cream. This was really good the next day.

Sensational Chicken Noodle Soup

Reviewed: Nov. 29, 2011
This recipe definitely needs to be doubled. I used the No Yolk brand dumpling noodles and they were so good! Not as long as egg noodles and a little wider and tad denser. (I used 1/2 the bag) I added some chopped onion and used leftover chopped turkey. My son ate 2 bowls, and that's unusual for him. Can't wait to make with chicken.

Apple Pie by Grandma Ople

Reviewed: Oct. 10, 2011
I only had salted butter on hand, but other than adding a little bit of cinnamon I made this pie exactly as written. We ate a slice the evening it was baked and it was swimming in butter and so so sweet, almost tasted like carmel. But, the next day this pie was amazing. The strange carmel butter sauce was gone, I guess soaked up by the apples. Can't wait to make this again, but I will remember to make it the day before.

Banana-Zucchini Bread

Reviewed: Sep. 23, 2011
LOVE! I did add an extra banana based on other reviews that this was dry. Must have made a difference because they were incredibly moist. I made as muffins and baked for 25 minutes. Didn't add cranberries as personal preference and I sprinkled coarse sugar over the tops before baking. So good!
