Southern Grits Casserole

Reviewed: May 12, 2013
Delecious! I made for a group of friends who had never eaten grits and they all loved it. I only used 7 eggs and about 1/4 cup of milk based on other reviews. Other than that I made as written. I also seasoned my grits before mixing with other ingredients.

Blonde Brownies I

Reviewed: Sep. 18, 2012
I'm pretty sure I'm having altitude issues with my baking. This was so runny it wasn't edible, and I made it twice just to be sure I didn't do something wrong. However, I let it sit in the pan almost all day out of disgust and much to my surprise it firmed up and tasted out of this world good!! I will add more flour next time and see if that helps. With so many good reviews it has to be a problem with something other than the recipe.

Chicken and Dumplings IV

Reviewed: Sep. 18, 2012
I thought the flour mixture made it too thick and gave it a weird flavor. Will try again but with 1/2 the recommended flour. Dumplings weren't bad but some of them were gooey, or too dense. Thank you for the spatula trick because my chicken was definitely sticking to the bottom of the pot.

Way too sweet and I wasn't crazy about the topping. Followed the recipe exactly.

Red Garlic Mashed Potatoes

Reviewed: Sep. 18, 2012
I loved these and ate so much my stomach was aching! I didn't have crushed garlic so I just sprinkled a little bit of garlic powder in while the potatoes boiled and I liked the subtle taste, I didn't add any extra to the mashed potatoes. Also used milk because it was all I had on hand and I only added 1Tbsp of sugar. I liked the added sugar, you couldn't really pick out the extra sweetness, it made it more like the potatoes themselves were sweet.

Graham Cracker Crust

Reviewed: Jul. 9, 2012
Made a perfect crust for my key lime pie. Perfect sweetness. I added a tiny bit more butter as it seemed a little crumbly.

Key Lime Pie VII

Reviewed: Jul. 9, 2012
For how easy this was you can't beat it! I loved the creamy texture. I found that 2 cans of condensed milk is only 2 1/2 cups though, so to be safe I used enough from a 3rd can to make 3 cups. I know a lot of reviews said they just used 2 cans, but I wasn't sure. Also used bottle key lime juice and it was fine. I baked about 10 minutes and never saw bubbles. Better the next day. Edited: I've made this with 3 cups of sweetened evaporated milk and I've made it with 2 cans. I think it's much better made as written, the creamier taste and texture make this pie so much better.

Peach Cobbler

Reviewed: May 27, 2012
I wasn't sure how good this was going to be since I only had a frozen mixture of peaches, strawberries, mango and pineapple... but it was so yummy. The batter was very runny and I wan't certain it was going to cook properly but it did. I think I had to leave it in for an extra 5 minutes or so. I used a little more fruit than called for and I also added a little bit of cinnamon. Can't wait to make this with blackberries.

White Chocolate Chip Oatmeal Cookies

Reviewed: Apr. 20, 2012
Not bad, but a tad plain tasting. I think maybe some cinnamon might be nice. 3.5 stars but I don't know if I will make them again, I wouldn't mind trying them with butterscotch chips. I baked for exactly 12 minutes and they were the perfect chewy consistency.

Mike's Signature Pretzel Bread

Does baking soda and water make crack? Because this bread is addicting! And I finally found a bread my carb hating husband likes. Wish I would have listened to other reviews and doubled this.

Pizza Dough I

Reviewed: Apr. 11, 2012
This wasn't terrible but not what I was expecting in a pizza dough. Very easy to make but was hard to spread in my pan and didn't cook well. My cheese started getting too brown before the crust was ready.

Mini Pineapple Upside-Down Cakes

Reviewed: Apr. 9, 2012
I made these in large muffin tins and just used the whole pineapple ring. I also added the cherry before adding the cake mix. Somehow I managed to use too much butter and the top wasn't as crusty as I would have liked, but they were still yummy.

Sweet Dinner Rolls

Reviewed: Apr. 9, 2012
This was my first time making rolls and I was surprised how easy it was. I followed MommyFromSeattles tips and also made cloverleaf rolls. I had enough dough to make exactly 12 rolls in the larger muffin tins. I used 2 1/2 tsps of Rapid Rise yeast. Next time I think I will take these out after 10 minutes of baking. From MommyFromSeattle: "I made cloverleaf rolls and baked for 12 min. exactly. Soft, moist, tender and flavorful. I used rapid-rise yeast (which only requires one rise) and had these on the table within 2 hours. No changes needed - amazing! TIP - I make this by hand using Rapid Rise yeast (aka Bread Machine yeast). I warm the water to 110-120 degrees and add to the yeast and sugar in my KitchenAid mixer. Let stand for 10 minutes until foamy (same for any type yeast). Then I add the warm milk, melted butter, salt & egg and mix well with paddle attachment. I then add the flour one cup at a time. When dough comes together, switch to dough hook and knead for 5 minutes (6-7 min. if doing it by hand). I cover the dough and let sit in my bowl to rest for 10 min. then I shape into rolls and let rise for 1 hour."

I liked these because they weren't too sweet. Nothing super fancy about them, just simple and delicious. Exactly enough batter to make 12 regular size muffins.

Creamy Au Gratin Potatoes

Reviewed: Jan. 8, 2012
Creamy, rich, cheesy, PERFECT! I made as written although I did use a 2qt. casserole dish and it fit perfectly. I might chop the onions next time and just add a small amount. Flavor of the onions was great but I wasn't crazy about the large pieces. I'm afraid I'll have to throw out all the leftovers to avoid eating the rest for lunch tomorrow.

Peanut Butter Frosting

Very light and fluffy with a mild peanut butter taste. Make sure you beat until nice and fluffy. I only added about 2-3 Tbsp. of milk. Be sure to add a little at a time for the perfect consistency.

Super-Delicious Zuppa Toscana

Reviewed: Dec. 2, 2011
So yummy. I do think next time I make this I will use kale instead of the spinach, I thought the spinach ended up a little slimy. I added a tad more than the 1 cup of cream. This was really good the next day.
