Grilled Chicken Adobo

This was nice and easy to prepare. I used a whole cut frier that I skinned instead of boneless breasts. I found that cooking the chicken for 30 minutes plus 2 minutes on each side on the grill resulted in slightly over cooked rubbery chicken. Great flavor though! I'm glad that the weather was nice as I needed to air out the house...the smell is great, but very intense with the vinegar and soy. I will do this one again.

Salmon with Brown Sugar and Bourbon Glaze

This was really lack luster how I prepared it. I used half the amount of butter and brown sugar.....mistake I guess since it was really plain tasting. I wanted to avoid the "hard candy" effect that some reviewers mentioned, I ended up with a blah dish. May or may not try again.

Salmon Fillets with Creamy Dill

The topping completely hid the taste of the salmon and I only used half of it on the salmon. If I was to make this again, I wouldn't use yellow mustard (honey mustard would likely be better) and I would only make 1/4 of the amt.

Broiled Scallops

I use 1 tbsp garlic salt, 1 tbsp garlic powder. I let the broiler get up to full heat and I put the scallops about 2" from the elements....they cooked perfectly. The did, however, taste artificial due to the garlic salt I believe. Next time I'll use fresh garlic. I added parmesan cheese and cracked pepper as recommeded...this salvaged the dish. I would try this again with fresh garlic.

Terrific Turkey Chili

3.5 stars if we could. Average chili. Needed more of something....pepper perhaps. We added 3 cloves of garlic and the beans (canellini, kidney, and black). If we were to try this one again for a "quick chili" (as opposed to an all day chili), we would drop the zuchinni as they seemed to not add much flavor and distabalize the consistency of the chili.

Buffalo Chicken Dip

We had this at a tailgate...now I will not go to a tailgate that doesn't have this dip. It is that good. I add one jar of the refrigerated blue cheese dressing found near the pre-made salad section in the grocery store. Great with Stacy's pita chips.

Actually Delicious Turkey Burgers

Yummy! This is our staple turkey burger meal that we make at least once a month. It is perfect for a healthy meal. I add alvacado slices with some diced green chilies as a topping.

Chinese Roasted Chicken

Not sure if I would try this one again. We marinaded in for 1 hr at room temp, turning if often. I didn't have the fennel seed, so maybe that would have made the differeence. It smelled GREAT when it was cooking, but after we pealed the skin off, the meat didn't have any flavor....I guess this is a common issue. Maybe we should have injected some of the marinade. We cooked a 3.8 lb bird for 90 minutes and it was cooked perfectly.
