Cherry Cheesecake Frozen Yogurt

Reviewed: Jun. 9, 2012
I made this with homemade non-fat yogurt (thick, but not Greek) lowfat cream cheese and fresh picked cherries. It was a little heavy on the fruit for my tastes, but otherwise very tasty and creamy. I will definitely try this again with other fruits and probably less sugar

Crescent Mummy Dogs

Reviewed: Nov. 1, 2011
I hate hot dogs unless they are charred over an open flame, but these were so tasty (and cute!). The kids loved them and they made a great addition to our Halloween menu for the kids. We omitted the cheese because I forgot, but they didn't even need it. Definitely have to try it with cheese next time!

Halloween Brain Dip

Reviewed: Nov. 1, 2011
This felt like cheater guacamole, and since I was pressed for time and feeding it to the kids, I went with it. The dip turned out strange, but the idea of the head of cauliflower was a nice touch. the boys didn't buy it, but it grossed the girls out pretty well.

Black Halloween Punch

Reviewed: Nov. 1, 2011
Brilliant idea for a Halloween party. I have made this two years now and both times, it turned out a murky orange color. The first year, I added black dye to it. This year, I just added a bit more blue to darken the brown. It is REALLY sweet though. I cut the sugar in half and it was still plenty sweet. I also did a frozen skull and the dry ice and it turned out so perfect. The kids LOVED it and ask for it every year.

Blackberry Muffins

Reviewed: Oct. 30, 2011
I made these with whole wheat flour and frozen berries. They were very tasty and filling! The amount seems to be off though, as it made more than 12 muffins.

Chunky Monkey Pancakes

Reviewed: Aug. 3, 2011
I expected these to turn out very sweet and closer to a dessert-like pancake. I was wrong! These are moist, flavorful, and have just the slightest hint of sweetness. I made them with semi-sweet chips instead. The second time, I made them with only whole wheat flour (red). They were incredibly filling, but still moist and fluffy and yummy. My daughter (7) raved about these and made a special effort to call Dad to tell him about them! I will definitely make these again and again.

Pumpkin Black Bean Soup

Reviewed: Jul. 23, 2011
I made this recipe almost exactly as written (I didn't have sherry vinegar, so I just added half the measure of red wine). It had a VERY subtle flavor, almost weak. Not enough flavor to carry the soup on its own, but enough to not be bland. Most of the high reviewers added several pungent spices to the dish that would seriously alter the flavor chemistry. Having made the original, I am in agreement with doctoring the spices a bit. The recipe makes for a great base, but needs to be flavored according to your tastes. My husband ate all of the leftovers, but I think it was more because he had missed lunch than because he really liked it.

Lola's Horchata

Reviewed: Jun. 14, 2011
This recipe was extremely watery. I let the rice sit overnight and doubled the milk and it still wasn't the same consistency as horchata I have had in the past. Not to mention the cinnamon globe that form from the ground cinnamon. That is easily remedied by soaking a cinnamon stick with the rice, but, again, the texture was off on this. I will keep looking.

RWOP Finalist: Roasted Tomato and Pepper Soup with Pesto Cream Cheese

Reviewed: Jun. 14, 2011
Yummy!! I made this for the hubby last night and he told me that I HAD to make this again. It was so easy to make too. The servings are VERY generous. I made a 1/4 batch and we each had two full bowls (I was stuffed after the 2nd). The Pedro is a wonderful addition. I didn't have any croutons, so I tossed a few extra pine nuts in at then end. Honestly, it didn't really need the crunch. Thank you for this recipe!!! Definitely will make again.

Good Morning Wrap

Reviewed: Jun. 6, 2011
The first time I made these, I omitted the sugarand replaced the pineapple with mixed berries. It was ok. The kids were kind of picky about them. The next time, my husband made them. He is the type to grill EVERYTHING so, of course, he tried to grill these. Definitely an improvement!! He made them without the sugar as well and replaced the pineapple with blueberries. I will definitely be grilling these again.

Shrimp Burritos

Reviewed: Jun. 4, 2011
These were pretty tasty. The only change I made to the main recipe was to use small amounts of actual garlic instead of garlic salt to cut the sodium. When serving, I added cilantro and lime juice. Added a great flavor to it. Next time, I think I will use a little more shrimp, but only little.

Pumpkin Cream Cheese Muffins

Reviewed: Apr. 18, 2011
By far, one of my favorite muffins. Every time I make them, my husband won't stop raving about them and he'll start handing them out to anybody who stops by. The kids love them too and ALWAYS ask for more. They are amazing and even more so the next day when the cream cheese ages.

Addictive Sweet Potato Burritos

Reviewed: Apr. 18, 2011
These were a pretty decent twist on a typical bean burrito, but I wouldn't necessarily call them addicting. Easy to make and a great way to get my daughter to eat sweet potatoes. Frying them is a nice touch (albeit not necessarily a healthy one :D).

Fusion Hummus

Reviewed: Apr. 18, 2011
Meh. It was ok. The balsamic was a little overpowering both in smell and in taste, especially when eaten just on crackers. I think I will attempt it one more time and significantly reduce the vinegar. I will also try mixing it with some veggies or something to tone down the taste of the vinegar.

Groovy Green Smoothie

Reviewed: Apr. 18, 2011
Very similar to Jamba Juice's new fruit and veggie smoothie. The kids LOVED it. Be forewarned, though, it is not as sweet as a typical fruit smoothie and that may throw some people off. Also, if making a double batch, you have to put the spinach into the blender in batches as it will not all fit at once.

Quinoa and Black Bean Chili

Reviewed: Apr. 18, 2011
This recipe takes a little getting used to as the quinoa adds a very different texture to the dish. I made this in an attempt to find vegetarian dishes that my family would eat. The flavors were good, but the kids didn't like it. My husband just kept saying that it would be better with meat in it. Sadly, as much as I prefer vegetarian dishes, I'd have to agree with him on this one :( This will still be a standby recipe to use up food storage in the future.

Pumpkin Pie Spice I

Reviewed: Apr. 18, 2011
Perfect blend. Plus, a half recipe fits nicely into my old 1 oz McCormick pie spice container, so I didn't need to find a new one!

Bean Salad

Reviewed: Apr. 18, 2011
I really liked this recipe and it was a great way to use some of the dried beans in my food storage. However, my husband and I much prefered this salad heated with a sprinkling of cheese on top and served on crispy corn tortillas. Made for a great healthy lunch!

Crunchy Pumpkin Pie Granola

Reviewed: Apr. 18, 2011
I omitted the fruit and added shredded unsweetened coconut. It turned out splendidly. I also had to cook it considerably longer than the recipe called for, but it was worth the wait. You would NEVER guess that this didn't have oil in it. However, as other reviewers mentioned, the pumpkin pie spice didn't make it taste like pumpkin pie at all.

Jose's Shrimp Ceviche

Reviewed: Mar. 22, 2011
This recipe was very similar to one that I had in a little mexican place in the middle of Nevada. It needed more than one jalapeno though. I was a bit wary of "cooking" the shrimp with the juice. I only had cooked shrimp the first time around and it was bland from not absorbing the juice. It was much better the second day though.
