Spinach Saute

I love spinach, and this is now one of my favorite ways to prepare it! This was very creamy with a bit of tang from the lemon juice. I added a little garlic powder and pepper too, and that really rounded out the flavor. Yum! - Update- I've made this many times now, and sometimes I throw in some chopped tomato, red pepper flakes, and pine nuts for a different twist. That's delicious too!

Mustard Green Beans

Not my favorite recipe for green beans, but a nice change of pace nonetheless. I'll hang on to the recipe to add variety in the summer when I love to eat beans a lot.

Spinach Salad with Warm Bacon-Mustard Dressing

Deee-licious, down to the last drop of dressing! It's not the healthiest salad, but it's definitely the tastiest. I love the hot dressing (which I heated in the microwave instead of getting another pan dirty).

Peanut Butter Noodles

so So SO good! How does all that flavor fit in a low-fat, healthy recipe?! I made the sauce in the microwave instead of getting another pan dirty, and I used low-sodium soy sauce and red pepper flakes instead of chile paste since that's what I had on hand. Also added some broccoli, and it was just as good as my favorite Thai restaurant, and probably healthier! The only tiny change I might make next time is to add a small amount of cornstarch to the sauce to thicken it slightly.

Cranberry Sauce I

This is a bit tart for my taste, although I did like it better after it chilled in the fridge. It tasted much sweeter when it was cold for some reason. I'll finish off the batch, but I probably won't make cranberry sauce again.

Baked Cheddar Bacon Spread

This was good, but I was looking for something that would 'wow' every party, and this wasn't it. I added a little Tabasco and garlic powder, and without that I think it would have been a bit bland. Because I was in a hurry, I used a few tablespoons of dried minced onion instead of the real deal, and I microwaved it for 5 minutes instead of baking. I cut the recipe in half and it still made a lot (would have easily fed 10 people). My only suggestion is to go easy on the top layer of cheese, because when it melts it gets greasy and it's not the prettiest thing to look at. Still tastes good though!

Spinach and Rice (Spanakorizo)

I picked out this recipe as a way to use up some leftover spinach, but after I tried it I put it right into my 'favorite recipes' file. Now I make it once every couple weeks. I love the flavor of this dish, and it's warm and comforting in the winter. You do have to stir the rice every 5 minutes or so to prevent the top layer from getting crunchy, but other than that I didn't have a problem with the recipe. Per other reviews, I usually use about 2 T olive oil, less spinach, and a little garlic powder. I also like to add a can of garbanzo beans and a little tomato paste for extra flavor. And of, course, it's not the same without some lemon juice and feta sprinkled on top!

Venison Pot Roast

I thought this was fine, but nothing special. Venison meat is a rarity for us and we'll keep looking for a special recipe to prepare it. I followed a previous reviewer's recommendation to use beer instead of apple cider, and I roasted it in the oven for 3 hours at 325 F instead of doing it on the stove. The meat came out very tender and moist that way - it just needs something else in the seasoning.

Fresh Strawberry Pie III

I'm giving this a 3 because it got mixed reviews when I served it. Personally, I thought it was too sweet and I didn't like the taste or consistency of the sauce. But, my guests said they liked it a lot and wouldn't change a thing. The leftover pie sat sadly in the fridge. Next time I'll try a different recipe that doesn't use jello.

Puttanesca I

I like how all the ingredients in this sauce meld together to create that beautiful, salty, rich flavor. Even the anchovies blend right in and disappear. I also like that you can use fresh tomatoes to make this. However, I'm lazy and I don't mind seeds in my sauce, so instead of pushing the tomatoes through a sieve I just roughly chopped them in the blender and poured them in the pot. I let them boil while I was preparing the other ingredients, and by the time I was done they had thickened up into a nice tomato-y sauce. I accidentally bought a jumbo jar of un-pitted olives and I've been grumbling as I pit them ever since, so I'd recommend buying pitted olives if you can find them! One gripe with the recipe: I think it makes more like 2 servings.

Mom's Warm Milk

I didn't like this, but to be fair I'm not a big fan of milk. I was hoping to develop a taste for it with this drink, but no luck. I thought it was too sweet, even with the sugar cut in half. I guess I'll stick with the classic glass of ice cold milk with a cookie to make it palatable!

Smoked Gouda Mac and Cheese

I had high hopes for this one, but it just didn't work out. I think something was wrong with the proportions, because the sauce was too thin even after I tried to remedy it with some cornstarch. I was disappointed since I was really looking forward to delicious results! Next time I'll stick with my trusted standby mac n cheese recipe.

Spicy Refrigerator Dill Pickles

This was my first attempt at making pickles and I was surprised at how easy it was. I have to admit, I snuck a pickle after only one day, and they definitely get better if you can wait it out a few days. I used 1 T of red pepper, and the flavor was perfectly spicy and garlicky. Yum! The only thing I'd change next time is skip chopping the dill because it got messy and I think you'd still get the same flavor with whole sprigs.

Creamy Potato and Leek Soup

This was good, but I was looking for an AWESOME recipe and thought this was a little bland. I added some bacon, onion, cheddar cheese, and pepper to make it more flavorful. Next time, I think I'd try a recipe for baked potato soup instead.

Roasted Brussels Sprouts

Possibly the best recipe I've ever found on allrecipes.com, and I've tried a lot of them! I never thought I'd be addicted to a vegetable, but I'm hooked! This is my new absolute favorite way to eat brussel sprouts. I'm not sure I can ever go back to my old recipes again!

French Onion Soup Gratinee

Oh...my...gosh! I've been searching for the perfect french onion soup recipe and my search has ended. I found this just in time for winter, and I'll be making it a lot. This has everything you'd expect from a truly great french onion soup. I was skeptical about the balsamic vinegar, so I only used 1 t, but 1 T would probably be fine. Oh, and I didn't have kitchen twine so I just threw the herbs in and fished them out later. That worked fine. One quibble - I'd say it makes more like 6-8 servings.

Cheesy Ramen Noodles

I graduated from college but still love ramen noodles as a guilty pleasure now and then. This was delicious! Adding cheese is simple and ingenious, and I can't believe I've never heard of it before. I try to watch my salt intake, so I drain off some of the water after the noodles cook and only use half the seasoning packet, which leaves the noodles with the same yummy flavor. I also add in frozen veggies to mix it up sometimes. This is a keeper!

Fabulous Cilantro Pesto

I didn't like this a single bit! Mine turned out very bitter, and I can't figure out if it was the vinegar or the walnuts or what. Since I love cilantro, I'd give this another shot, but change it up with lime juice instead of vinegar, pine nuts instead of walnuts, and a jalapeno instead of the cayenne.
