I picked out this recipe as a way to use up some leftover spinach, but after I tried it I put it right into my 'favorite recipes' file. Now I make it once every couple weeks. I love the flavor of this dish, and it's warm and comforting in the winter. You do have to stir the rice every 5 minutes or so to prevent the top layer from getting crunchy, but other than that I didn't have a problem with the recipe. Per other reviews, I usually use about 2 T olive oil, less spinach, and a little garlic powder. I also like to add a can of garbanzo beans and a little tomato paste for extra flavor. And of, course, it's not the same without some lemon juice and feta sprinkled on top!
