Easy Slow Cooker French Dip

A favorite of the hubby! I added some provolone to the buns before broiling. It smelled great when it was cooking and was the perfect meal for a cool fall evening. I cooked it on high for about 4 hours and the meat was still plenty tender and shredded easily. Next time I might follow the advice of other reviewers and add a little garlic, black pepper, and extra salt to the meat before cooking.

Lebanese-Style Red Lentil Soup

So delicious! I loved the lemon flavor and I think this will be in my regular winter rotation. I added some small star pasta that I had on hand to make it a little more of a complete meal. I think next time I might add some chopped celery and carrot too. I decided not to blend it just due to personal preference. I found that 2 1/2 lemons gave me the juice I needed. Also, 1 lb of lentils was about 2 1/2 C. I did have to add about a quart of water because it got pretty thick as the lentils boiled.

My Mom's Lasagna

Just okay. I picked this recipe because of the homemade sauce, thinking it would be more flavorful than something from a jar. It was just okay though, and it added a lot of extra work. I would probably look for a quicker recipe next time.

Garlic Bread Spread

The perfect side to any Italian meal! I served it with lasagna and salad. I was surprised it didn't call for salt so I added 1/4 t. I also used garlic powder instead of minced garlic to reduce the garlic breath effect. Finally, I didn't have fines herbs so I skipped it. Still turned out great!

Potato Dumpling Casserole

My review is only for the dumplings and not the cheesy casserole. I had leftover mashed potatoes to use up and needed a recipe for dumplings. The recipe was pretty easy to follow and the baggie definitely helped with the forming process. I kept the cooked dumplings in the fridge and just took out a single serving when I wanted to use them. I pan-fried them in a little oil until they were crispy on the outside and then served with kielbasa and sauerkraut. Very tasty! I would definitely do this again if I had leftover mashed potatoes on hand. Might try the cheesy casserole next time too.

Sauerkraut with Pigtails

I only followed this recipe loosely but it was delicious. I had leftover mashed potatoes I wanted to use (instead of instant potato flakes) so I made the dumplings a little differently. After they were done boiling I sauteed them in some oil with sauerkraut and kielbasa. Very tasty on this cool fall evening! Thanks for the inspiration!

Dill Dip

This is the best dip recipe I've tried so far. It makes a lot! I cut it in half and it was still plenty to serve at a party with my veggie tray. I read the reviews ahead of time and decided to skip the sugar but otherwise I stuck to the recipe. I would make this again.

Black Bean and Corn Salad II

Love this! It deserves a name with more flair! Very versatile. Good as a stand alone salad, on tortilla chips, or as a taco topper. For lunch, a tasty side is cheddar jalapeno toast. I was concerned about the avocado turning brown in the fridge so I left that out and just added it to each portion as I ate it. It lasted several days in the fridge that way. I also tossed in a diced serrano pepper for a little heat and cut down on the olive oil a bit. I found that two limes gave just the right amount of juice. I tossed in some diced peach with the leftovers one day and that was a good variation too.

Tomato Bread Salad

Light, fresh salad for summer! The fresh basil is a must. I also threw in some olives and added oregano and parsley to the dressing. If I had mozzarella balls on hand I would throw those in next time.

Tasty fresh side dish for summer! I skipped the bay leaf, used fresh basil, and sprinkled some feta cheese on top. The sweet basil with the salty feta was a great combo and helped add extra flavor to the veggies.

Greek Orzo Salad

Just okay as written - the dressing needs some work. I ended up mixing up a different greek dressing recipe and added that instead. For a basic dressing, try equal parts olive oil and red wine vinegar, then add salt, pepper, oregano, garlic powder, mustard powder, and lemon juice to taste. With that addition it made for a tasty lunch. I might try adding a can of tuna to the leftovers for some variety the next time I eat it.

Vietnamese Rice-Noodle Salad

Good flavor but it needs to be eaten right away. The noodles dry out and get hard quickly in the fridge. After reading reviews I decided to cut the garlic in half but otherwise I followed the recipe pretty closely. I did have to sub bok choy leaves for the napa cabbage due to availability at my grocery store. If I were to make this again I think I'd use a different kind of noodle, such as soba, a spicier chili pepper (like a Thai pepper) add some shrimp.

Hot 'n' Spicy Buffalo Chicken Salad

Delicious, filling lunch during the work week. I cooked the chicken ahead of time so it would be ready to go during the week. It was easy to throw the rest of the salad together each morning and get out the door. I added chopped onion and tomato and left out the ranch dressing and butter. I thought it still had plenty of flavor that way. Word to the wise - you can buy bottled wing sauce at BW3's (Buffalo Wild Wings) if you have one near your house. The medium sauce is perfect for this recipe.

Strawberry Blue Cheese Salad

Tasty combo although the dressing is a little tart. It could use a pinch of sugar. Otherwise it was great. I used slivered almonds instead of the pecans and I liked that addition.

Steak Salad

Tasty way to turn leftover steak into a filling lunch! I happened to have most of the ingredients on hand except the green pepper and carrot so I left that out. I also cut down on the cheese a bit but otherwise I followed the recipe. I would make this again when I have leftover steak on hand.

Mayo-Free Potato Salad

This has the perfect amount of crunch from the celery and pickles and the dressing is yummy. I've never been a huge fan of mayo dressed salads so this hit the spot for me. I did leave out the cilantro since that seemed odd with the other ingredients. It doesn't have a very appetizing appearance due to the dull green of the pickles combined with the pinkish dressing (from the paprika). I think if I brought it to a party people would look at it suspiciously and it would sit untouched! No problem if you're not taking it on the road though.

Yum! I skipped the brown sugar as others have mentioned, but otherwise I followed the recipe pretty closely. I did cut down on the butter though, and I sprinkled in a little parsley.

Pesto Tuna Salad with Sun-Dried Tomatoes

I followed the recipe loosely with delicious results. I didn't have pesto but did have fresh basil so I used that instead. I also added a bit of mustard and chopped onion. Very good on paninis! I might try adding a little lemon juice next time too.
