Baingan Bharta (Eggplant Curry)

This is a decent curry, and the best use for eggplant I've found so far. I thought it was too spicy, so I'd cut back on the jalapeno next time. Also, I roasted the eggplant on the grill rather than baking since it cooks much faster that way.

Fried Green Tomatoes

I give these a 3 by themselves, a 4 dipped in ketchup, and a 5 in sandwiches. I think they'd be good dipped in salsa too, but I didn't have any on hand. My favorite is to layer them with sliced red tomatoes, cheese, jalapeno slices, and bread and grill it up. I'd make this again just for the sandwiches! I did make a few substitutions to the recipe - used panko instead of cracker crumbs, oil instead of butter, and added cayenne pepper, minced green onion, and Parmesan cheese to the flour mix. Probably sacrilegious to a Southerner! =)

Orange Vinaigrette

I just wasn't crazy about this, even though I thought I'd like it. I tried it on both asparagus and salad, and liked it better on asparagus - but not enough to make it again.

Grilled Beets in Rosemary Vinegar

Yum, these were a great new way to make beets! Next time I'd grill them a little longer though, since mine were still a little firm. Also, the recipe doesn't specify to peel the beets, but I did it anyway because I can never seem to get them clean enough by scrubbing. Oh, and don't use a wood cutting board or it will end up pink!

Make-Ahead Sloppy Joes

I made these using my own recipe for the sloppy joe meat mix, then followed the instructions for freezing and thawing. They turned out great and can't be beat to instantly fulfill a craving for sloppy joes! I appreciate that you can just thaw one at a time. The buns did get slightly dry when reheated in the oven, but I think baking them for a shorter time would help that. I was worried about them getting soggy and that didn't happen at all. I'll be making this again!

German-Style Beet Salad

Interesting idea for beets..it was decent, but I'd make a few changes next time. I read the previous review that said there was too much caraway and thought "Impossible! I love caraway", but it turns out they were right! There's so much caraway that it crunches when you eat the beets. I wonder if it's supposed to be 2 teaspoons? I'll try that next time, and also cut back or eliminate the oil. I also might try adding orange sections and dill, as suggested by other reviewers.

Roasted Garlic Potato Soup

I thought this was pretty good and would make it again. I used red potatoes and didn't peel them, because I'm lazy and who likes peeling potatoes anyway?! =) The peels mixed right in after the trip through the blender, and they gave a little color to the soup.

Lemon Basil Carrots

Yum, this recipe was delicious! I was looking for a new twist on carrots, and this was it. The lemon flavor wasn't too strong, just a nice background note. I happened to have fresh basil on hand, so I used that and it really made the dish.

Shrimp, Broccoli, and Sun-dried Tomatoes Scampi with Angel Hair

This recipe has potential but is only worth 3 stars as written. Here are my tips: 1) Use more garlic 2) Use half the butter 3) Add a little white wine 4) Stir-fry the broccoli with the garlic and tomatoes - that way it won't get overcooked 5) Top with Parmesan for serving. Now, you will have a delicious dish. =)

This was pretty good, but I think next time I'd try adding a little lemon juice and salt per other reviews. To prevent it from turning brown while storing in the fridge, press plastic wrap on the surface.

Mama's Balsamic Vinaigrette

I've made this twice - once as written, and once with fresh herbs during the summer. It's SO MUCH better with fresh herbs! Try andding a handful of freshly chopped basil and parsley - you won't be disappointed!

Yum! I didn't have chervil so I was heavy-handed with the other spices. Came out nice and crispy after 8 minutes, and were great dipped in hummus. So much fresher and better-tasting than store-bought!

Apple Raisin French Toast Strata

Sorry to say, I just didn't like this. It came out mushy, even though I baked at a higher temp. To be fair, I followed some of the other reviewers' healthy substitutions, so that could have been part of it too. I'm not going to try this one again.

Jalapeno Hummus

Sooooo much better than store-bought hummus! Makes a tasty sandwich spread and adds some fiber too. Pretty spicy as is - in my opinion, would have been too hot with red pepper flakes.

Sauteed Portobellos and Spinach

Very good! I used up some fresh spinach (instead of frozen), and I didn't have any mushrooms on hand, but it was still surprisingly tasty! I'll be hanging on to this recipe.

Bacon Feta Beans

Sooooo good! Any strong, salty cheese seems to work. I used extra sharp English cheddar since that's what I had on hand. I might try turkey bacon next time to cut out some of the fat. I will definitely be making this again (maybe tomorrow!).

Caramelized Bacon Twists

Positively addictive! I baked at 400 F for 12 minutes since that's what my bacon package said. Turned out great! I cut down the recipe to 4 slices and wished I would have made more!

Strawberry Spinach Salad I

Delicious and different. Didn't hold up too well in the fridge after tossing though, so don't mix the dressing in too far in advance. I followed other reviewer's advice and used cider vinegar and only 1/4 C sugar. Might also be good with some crumbled bacon, blue cheese, or nuts.
