Low-Fat Pumpkin Pie

I double the spices & added 1/2t. all spice because I like pumpkin pie extra spicey. Turned out very yummy, no one noticed it was fat free!

Pistachio Salad

Recipe is flawed!! You MUST drain the pineapple and DO NOT prepare the pudding mix. Cut bananas turn brown overnight in the fridge, omit or add just before serving.

German Spaetzle Dumplings

Great recipe, the flavor is BETTER! than our favorite authentic German restaurant. The nutmeg makes it so good, my family raved. I served this with pot roast in a red wine, mushroom gravy and roasted asparagus. Thanks for sharing this recipe!! **By the way, a Ziptop bag with 4 or 5 small wholes punched with a skewer was a lot easier to handle than the strainer method. The texture was more authentic as well.

Quick Gnocchi

I’ve made gnocchi before using peeled, boiled and mashed potatoes and this recipe is so much easier . The finished result is a fluffy pillow of potato-y goodness. I added ½ c garlic sautéed baby spinach (sliced supper thin, like confetti), 1/2 t. herbs de province and ¼ c parmesan roman blended cheese, all added before the introduction of the water, so that the heat could ‘active’ the flavors. I served them with grilled chicken, creamy mushroom sauce and finely shredded farmer’s cheese. Delicious!!

French Onion Soup III

This recipe was a pretty good BASE for a 5 star onion soup. As a few people have pointed out, it was very bland. It had 5 stars so I gave it a whirl. I was very disappointed by the amount of doctoring I had to do to this recipe. There wasn’t nearly enough onions, instead of 2 onion I used about 4 cups, omitted the water and halved the butter. I also added about 2 T. garlic (fresh, minced), 1/4c white wine, 2T worcestershire sauce, 1T fresh parsley, dash of salt and a healthy dose of fresh ground pepper and about 1/2t herbs de provence(yum!). The result turned out very yummy but I felt like I had to rewrite the whole recipe.

Beer Cheese Soup II

Delicious and so easy to make, my family loved it. I served this rich soup in the Italian Bread Bowls II recipe. The yeast flavor of the beer in this soup matched well with the bread bowls. Tasty.

Wonton Soup

I omitted the pork and used 1/2lb. minced salad shrimp, reserving some to float with the green onions and instead of all chicken stock, I used 1 can of chicken broth and 1 can of veggie broth. Wonderful Recipe!! So simple and tasty, my family raved about it.

Thai Ginger Soup

Wonderful soup. I was amazing at the amount flavor, but not at all overpowering. My family and I loved it!!! Even my mother, whose isn't a big fan of fresh ginger. I served it with eggrolls and a simple vegitable stirfry. I will most certainly make this soup again.
