Spinach and Feta Pita Bake

We loved this! Our grocery stores don't carry sun-dried tomato pesto so I used the Sun-Dried Tomato Pesto recipe on this site. The whole thing was super easy, fast, and colorful! Next time I'm going to make it a bit healthier with low-fat feta cheese and add a few more veggies. Even my two year old liked it, and she's definitely going through a hate all new foods phase.

Pizza Casserole

My husband loved this, but I felt like the pepperoni was a bit rubbery. Next time I'm either going to saute it or layer it on top so it can get crispy.

Mouth-Watering Stuffed Mushrooms

My only problem with these were that they were a bit hot for me. Otherwise, simply delicious! I brushed with butter, sprinkled parmesan cheese and bread crumbs on top like others suggested. I also used asiago cheese on top. Definitely a keeper, just going to cut down on the cayenne to 1/8 tsp.

Easy and fast. I made mine into small patties and the only problem I had from the original recipe was having to cook them about 5 - 10 minutes longer than indicated.

Tortilla Rollups IV

This honestly just didn't do anything for me. The filling just needed something extra, maybe beans or a meat, to give it better texture. The tortillas didn't flatten on me, since I chilled them overnight, but the cold plus the filling just made the whole rollup soggy. I gave them two stars because my husband and father in law liked them.

Baked Potato Soup

This was great! I doubled the recipe for a large group and although it took a while, I didn't manage my time well. I also made a more vegetarian version with vegetable stock and used olive oil instead of bacon and bacon drippings and it tasted just as good as its counterpart.

Chocolate Mint Cookies I

These cookies are WONDERFUL: moist, flavorful, and easy. I did as the recipe said with the exception of adding 1/4 tsp. mint extract to the mixture. The cookies would probably be just as good without the extract, just less minty if that is your preference.

Snow Flakes

These were awesome! They came out soft and flavorful and were very easy to work with. I used butter and almond extract due to lack of ingredients, and I'm looking forward to trying them with the orange zest. The flavor reminded me of buttercream frosting or cream cheese sugar cookies.

Garlic Cheddar Chicken

This was good, but a little soggy. I did bake it covered, so I may have baked it the wrong way than intended. I baked it for about 10 minutes more uncovered to brown it up and the chicken crisped up a bit. Very tasty overall.

No Time to Cook Chicken

I did not like this at all. It was very bland, and although I added salt, pepper, onions, garlic, garlic powder and used cream of mushroom instead of cream of celery, there just wasn't much taste or color. Since I didn't use the cream of celery and that might have affected it and my husband found it okay, you might want to try it if these ingredients usually add up to tasty food in your book.

Carrot Cake III

I made it with all the revisions mentioned in the reviews and although it almost makes it a different cake, it was wonderful! I made it with two 9 inch cake pans, baked it for about 35 minutes and that was a bit too long. Start checking it around 25-30 minutes.

I liked this, but the Worcestershire sauce was a bit overwhelming for me. I didn't add the honey mustard sauce due to diet constraints, so that may have balanced the flavor.

Beef Pot Roast

I followed directions exactly, minus the bay leaf, and mine came out dry, but still delish. I'm going to try putting beef broth in next time to see if that tenderizes and moistens it up a bit more.
