Better Than Best Fried Chicken
I never knew how much better just letting the chicken rest until doughy would make them once fried. Great chicken recipe!

Fresh California Salsa
this was my first time to make salsa... delicious! I didn't change a thing. :) Buying jarred from now on will only be under duress.

Spinach and Feta Pita Bake
We loved this! Our grocery stores don't carry sun-dried tomato pesto so I used the Sun-Dried Tomato Pesto recipe on this site. The whole thing was super easy, fast, and colorful! Next time I'm going to make it a bit healthier with low-fat feta cheese and add a few more veggies. Even my two year old liked it, and she's definitely going through a hate all new foods phase.
