Chinese Garlic Chicken

Reviewed: May 7, 2014
Kind of wonky. Why would you bread chicken and then simmer it in broth?! Although no breading was left on the chicken, at least it gave the resulting sauce some body. Flavor was good, technique aside.

Lentil Chili

Reviewed: Mar. 17, 2014
This was a good start, but needed a fair bit of doctoring up to really be interesting. It also required far more water than required. Just think: lentils and bulghur need way more than 3 cups of water to cook! I would estimate that I added an additional 5 cups of water during the cook time. For extra flavor, we added ground turkey, some red wine vinegar, and topped with cheese.

Raspberry Lemon Muffins

Very yummy, but rather wet. I will add another one-third cup of flour to the next batch.

Slow-Cooker Pepper Steak

Reviewed: Sep. 2, 2013
Husband liked this, but I was underwhelmed. A lot more seasoning is needed to propel this from brown crockpot mush into something really tasty.

Spicy Rice Noodle Salad

Reviewed: Aug. 10, 2013
At first, I wasn't convinced about the dressing. However, I added about 1 TB of peanut butter per other reviewers' suggestions, and it came out great! Definitely give the noodles and dressing a few hours to marry the flavors. Rather than chicken, I topped this salad with some chopped spicy peanuts and basil tilapia (just happened to have on hand).

Fat Free Refried Beans

Reviewed: Aug. 1, 2012
A good start. I found the proportion of water-to-beans perfectly fine. However, this recipe definitely needs some tweaking to suit your spice preferences. Mine needed double the garlic as well as cumin, chili powder, and jalapeno. I always like a good bite of acid in my food, so I recommend a little splash of cider vinegar in addition to the dash of liquid smoke (I did not use the whole 1 tsp called for).

Pasta e Fagioli I

Yum! Very tasty for being so simple. I like to add extra garlic and top the whole shebang with some parmesan cheese.

Buttery Soft Pretzels

Reviewed: Sep. 25, 2011
I added 5 TB vital wheat gluten (usual instructions are 1 TB gluten for every 1 c flour) to add to the chewy, stretchy texture I wanted to achieve. They were just phenomenal! I'll be making a bigger batch for an Oktoberfest block party!

Homemade Black Bean Veggie Burgers

Reviewed: Sep. 9, 2011
Simply THE BEST veggie burger recipe. They have a distinctly Mexican flavor, which I love. These bad boys are even robust enough to stand up to grilling, a claim most veggie burgers cannot make.

Just like store-bought! Save your money and make this in big batches. It stores very well.

Cumin and Coriander Chickpea Salad

Reviewed: Jul. 24, 2011
Yummy! Added a little bit of salt, to taste, some freshly ground black pepper, and cut WAY back on the olive oil - 2 TB was definitely sufficient.

Layered Vegetable Enchilada Casserole

Yummy, but requires more seasoning. I added 2 TB fajita seasoning, 1 tsp cumin, and 1/4 tsp garlic. Yum!

Double-Cheese Eggs Benedict

Reviewed: Feb. 15, 2011
I hate to give this less than 5 stars (no 4.75, allrecipes?), but with the addition of a little garlic powder and black pepper, the cheese sauce was OUTTA SIGHT! Big props to the excellent description of how to poach an egg - I had never done it before, but all of mine turned out very well. Thanks for the contribution!

Glazed Apple Cookies

Yumba! I followed the letter to a T with the exception of substituting margarine for shortening. I made 6 dozen of these for a cookie swap and folks are going to LOVE them.

Brunch Scones

Reviewed: Jul. 18, 2010
Very tasty, but the batter was a little too moist, which resulted in scones that were rather airy. I prefer a slightly denser scone, so I will use 2 c flour and perhaps 1/2 tsp less baking powder next time.

French Salad Dressing

Love it - but I would halve the sugar, or omit it and then add to taste as other reviewers have suggested.

Raspberry Coconut Layer Bars

Reviewed: Oct. 11, 2009
This was good, but not great. The combination of chocolate and raspberry is A+, but I think the base could be improved upon. Next time I make this, I will make a lemon or lime pie base by mixing fruit juice in with the sweetened condensed milk so that there are interesting flavors in the base rather than a boring, overwhelming sweetness.
