WOW, yum yum yum!! So, I hate making alterations to recipes before I've even tried them, but for this one I did just from reading others' comments and suggestions. I cut up one red bell pepper and cooked it along with the onions and garlic. Also, I used chicken broth. When I began cooking the quinoa and had set it to simmer, I think I had it too low so the quinoa wasn't cooking, so I added about 1/2 cup more chicken broth, turned up the temp to low-medium, and cooked another 12 minutes. After that, it was perfect! When I "stirred" the quinoa, I actually kind of folded it over on itself to prevent it from becoming mushy and it worked great! Added the corn, black beans and fresh cilantro and then squeezed juice of one lime. Seriously, delicious! I love how the sweetness of the corn goes well with the spice! I will be making this over and over again!
