Scott Ure's Clams And Garlic

Reviewed: Jul. 12, 2011
Using Pinot Grigio, I made the oil-garlic-wine concoction at home. Bottled it for transport to a local oyster farm. Put mussels (no clams available that day) in aluminum foil pouches, poured a bit of wine concoction in pouches before sealing and putting on the bbq grill. Opened the pouches after 10-12 min., drizzled the contents with butter & parsley. Voila... delectable, elegant steamed mussels at a picnic! Thanks for the recipe!

Best Carrot Cake Ever

Reviewed: Mar. 24, 2012
Excellent flavor (not too sweet and multi-dimensional) and texture. Thanks for the recipe! Frosted with Philadelphia Cream Cheest frosting found online. I picked up a few tips from earlier reviewers, like straining the (measured) shredded carrots in cheesecloth, increasing cinnamon (to 5 tsp) and adding 1/4 tsp each of allspice, clove, ginger, and nutmeg. Served cupcakes to a crowd of 22, aged 3 to 86. Every single one yummed it up!

Classic Tiramisu

Reviewed: Jan. 30, 2011
This fit in a 9" springform pan perfectly. After I'd assembled mine, I had one 3-oz package of unopened ladyfingers left. (Kindda like putting an IKEA piece together and being left with a few nuts and bolts. LOL.) Would have helped if the recipe specified to make double-thicknesses of cookies at the bottom and middle. Still, very easy to make, great light flavor. Next time, I'm going to bake my ladyfingers a bit to get them crispier, and make 3 layers of filling and 2 middle layers of single-thickness cookies. Thanks for sharing the recipe, Carol.

Marinated Veggies

Reviewed: Mar. 22, 2008
This marinade kept the vegetables moist. It enhanced, and didn't cover up, the veggies' natural flavor. I reduced the lemon juice a bit and replaced that amount with balsamic vinegar, added oregano and marinated all for no longer than 40 minutes. Succulent!

Luscious Slush Punch

Reviewed: Mar. 16, 2011
A very drinkable punch. Made it for the first time with only 1 cup sugar to 6 cups water, and it was just right for a party of 25 older adults. Even the men were drinking it... virgin! I might sweeten it a bit more for younger palates.

Dave's Low Country Boil

Reviewed: Dec. 20, 2009
What a crowd pleaser! Made 4 batches yesterday. First brought the Old Bay, 1 quartered lemon, 1 quatered sweet onion, a whole bulb of garlic (crushed) to boil. Then whole mini red potatoes & kielbasa chunks for 10 minutes, then thawed frozen cobbettes & dungeness crab sections for 5 minutes, then whole shrimp and mussels for the last 2 minutes. Met with "oooohs and ahhhs" when dumped at the table. Thanks for the recipe!

Turkey Goulash

Reviewed: Jun. 3, 2011
This is a quick and easy recipe, for sure, but it seriously lacked any depth of flavor. I may try it again, next time putting more flavorings like onions and garlic with the turkey as it browns. But as-is, the recipe is one-dimensional.

Sinigang na Baka

Reviewed: Jan. 28, 2010
If using a non-tender cut of pork (e.g. roast cut into cubes), make sure you simmer it for a while with the onion and garlic (I didn't, and the tough meat was the only thing I did wrong). When meat is tender to the prick of a fork, I would add the Knorr packet and the tomato wedges. Boil gently for 5 minutes. Then add 2" long bean slices (instead of string bean) and daikon (sliced 1/4" thick half-disks). Boil gently for another 5 minutes. Add baby bok choy (bottoms trimmed off) and shrimp. Boil gentlly for last 3 minutes. This process yielded a very colorful and yummy dish! I'm Filipina and this is the first time I've made this flavorful, economical and nutritious soup. Thanks to the poster and the reviewers, it wasn't a disaster!

Refried Beans Without the Refry

Reviewed: Jan. 2, 2012
Easy to make, but nothing outstanding about the taste. I halved the recipe, and still had so much left over from dinner for 8.

Restaurant Style Beef and Broccoli

Reviewed: May 4, 2011
This was a little sweet for my taste. I'm going to omit the sugar next time. If using a lesser cut meat, make sure to marinate for longer, or pound the slices with a tenderizing mallet.

Manicotti Alla Romana

Reviewed: Jul. 23, 2011
Made as is, except used half Italian sausage/half ground beef, and 2% milk instead of half-and-half. I used Classico brand Sweet Basil jar spaghetti sauce. Buono! The textures were so good: al dente pasta, firm manicotti filling, moist, non-runny sauce. For presentation, I ladled the white sauce to cover the entire length of each shell, letting it run down the sides. I then spooned the red sauce just on top along the length of each shell, so that the white sauce could be seen. After uncovering, I sprinkled Parmesan on top of the red sauce. (See the picture for how pretty it looked.) Thanks for sharing!

Asparagus, Feta and Couscous Salad

Reviewed: Jun. 17, 2011
Didn't have cherry tomatoes, so I used steamed diced carrots to get the coloring in the dish. I like how the dressing doesn't overpower the nuttiness of the couscous. I did add about 1/4 tsp. lemon juice to the dressing, to tie in with the Grilled Lemon Herb Pork Chops I served with it, also on this site.

Andrea's Pasta Fagioli

Reviewed: Jun. 8, 2011
I substituted diced tomatoes for tomato sauce, and broth for water. Microwaved a 10 oz block of frozen leaf spinach and added that in the end, with the pasta. I felt mighty righteous for making such a nutritious dish! It was so good, served with Aidells Artichoke & Garlic and crusty bread on the side.

Sesame Seared Tuna

Reviewed: Jun. 4, 2011
Thanks for sharing! Easy & tasty recipe for when one spots great looking ahi tuna at the market. I didn't have and definitely missed the wasabi paste, because without it, the dipping sauce could be a bit cloying to the palate. Served with creamy mashed potatoes and grilled asparagus spears.
