Green Bean and Mozzarella Cheese Salad

A favorite in our house. We use Monterey Jack cheese instead of Mozzarella to give it a kick.

Mexican Baked Fish

I have been on AllRecipes for a long time but just started reviewing meals. Hands down this is one of our favorites. It is so easy to make and very tasty! We actually don't even bother with the chip, avacado, or sour cream. The dish really does not need anything extra.

Parmesan Artichoke Casserole

One of my favorites. Now that I am off my Atkins-esk diet this recipe is a little to heavy on the mayo and cheese. BTW, I never used parmesan cheese. Try it with Mozerella...you won't be disappointed!

Mexican Corn

I love this recipe!!!! I would make it every night if it were not for the cream cheese:) I like the recipe the way it is, but I now add mushrooms and black beans. I even added some frozen peas. I followed other users advice and add canned jalapenos and green chilies. Such a great dish!!!!

Green Bean Blue Cheese Salad

To my surprise the flavors complemented one another very nicely. I did not love this dish but my husband and co-workers did. It was easy to make, so I will do so again. BTW - I followed another users advice and just used an Italian dressing that I liked...much easier than the oil ect..

White Chili with Ground Turkey

I would have given this 5 stars, but the recipe amounts were definately off. 5 cups of broth and 3 cans of beans would have been way too much. I only used 1 can of broth...and 2 cans of beans were plenty. Also, I added mushrooms. The meal was amazing and was delicious the next day.

Buffalo Chicken Rolls

In our house, my husband does the dishes when I make a difficult meal. After dinner he started right in on the dishes without even asking! Little does he know that this is one of the easiest meals to cook! The only problem I had was keeping the cheese in the chicken. I used 1/4 inch (or so) slices of monterey jack. It seeped out but was easy to scoop up and put in or on the chicken rolls. Any suggestions?

Artichoke Salad I

Great as a side or a main dish. I left out the olives and peppers and added sauted mushrooms and onions. Per another viewers suggestion I added a little of the marinade to the sauce and some shrimp. I did not like the shrimp with the meal but I think it would work well with chicken. I loved the flavor but I can see why it would not please everyones palate.
