Peanut Butter Chip Chocolate Cookies

This has t be the best cookie recipes I have tried in a long time. The cookies came out so moist and chewy. I couldn't find peanut butter chips, so I substitured the chocolate peanut butter swirl chips, and it the perfect amount of peanut butter flavor. I baked these for 9 minutes and they came out perfect. I made my cookies into 1" balls, and it made about 4 dozen cookies. I think I ate a dozen all by myself!

Cuban Ropa Vieja

This was a great dish. I served it with black beans and rice and it was a hit. Even the picky kids ate this one! I think this one will be in our regular rotation.

Chocolate Frosting III

Very easy to make when you are in a pinch. I was baking brownies and forgot to buy frosting. I found this recipe and made it and was very happy with the results.

Rempel Family Meatloaf

This is a really good meatloaf. I have made it several times since finding the recipe. I do as others have suggested and just use the dried onions from the sifted onion soup mix. It is a nice change from the tomato based meatloaf I grew up with. This one is more savory.

Ancho Tortilla Soup

This has to be the best tortilla soup recipe out there. I have been making this recipe for years. I have cooked it for many dinner parties and it is always a huge hit. If I am feeling a little pressed for time, instead of making my own tortilla strips I will just put some store bought tortilla chips in the bottom of the bowl. This one is a keeper!

Roast Sticky Chicken-Rotisserie Style

This recipe is very good. I opted to use just one chicken and place it in the crock pot instead of the oven. I still used the same amount of seasonings, but just on one chicken. I added about a 1/4 cup of chicken stock in the bottom of the crock pot. The results are wonderful. Everyone just loves this including the kids. I have made this several times and every time there are no leftovers.

Microwave Oven Peanut Brittle

This has to be one of the easiest peanut brittle recipes I have ever seen. I cooked it in an 8 cup pyrex measuring cup to accodate the bubbling of the mixture while it cooked. I poured the brittle on to a large cookie sheet that had sides and sprayed it first with butter flavored cooking spray. I also sprayed my nylon spatula with the cooking spray as well. This helped the mixed slide right off my utensils without sticking. I was using a 1000w microwave and cooked it for 7 minutes the first time and then 2 more minutes after adding the butter and vanilla. The peanut brittle came out perfectly. I think I will be making batches of this and giving it as gifts this year! Thanks for the great recipe!!!
