Cranberry Chicken

Reviewed: Jul. 29, 2010
Definitely will make again! Husband wasn't picky about measuring the cheese or craisins, which was fine with me. I might try it with different kinds of cheese and see what happens -- though the mozz was fabulous! Subbed water for wine and used frozen chicken which required extra 10-15 minutes cook time. Leftovers the next day were great too! We're big eaters, so we did need another side in addition to salad, but we just made extra stuffing. Light eaters shouldn't need anything else but salad. Can't wait to make it again.

Slow Cooker Pulled Pork

Reviewed: Dec. 6, 2013
Always a hit whenever we serve it. And if we don't have root beer, any cola will do (not diet). I too save money by using a cheaper cut of meat. After shredding, I just moisten the pork with bbq sauce (instead of covering it completely) and serve with extra sauce so guests can customize to their liking.

My Own Salad Dressing

Reviewed: May 29, 2011
Good flavor, but given the other reviews that said it was too oily, and given that I like vinegar, I used 1c oil and 1c white vinegar (because we were out of cider vinegar). I look forward to trying it with cider vinegar. I liked it this way, and my guests claimed the proportions were good. WARNING: If you plan to have leftovers to refrigerate, I recommend using something other than olive oil, which solidifies in the fridge. When I plan to use it again, I just have to take it out in plenty of time to melt.

Italian Sausage Soup with Tortellini

Reviewed: Dec. 6, 2013
This was great! I'm only giving 4 stars because I modified it just a tad. Following other reviewers' comments, I used 1 can stewed tomatoes instead of fresh peeled tomatoes (who has time for that?), and I used all dried herbs, which I reduced to about 1/4 tsp. I look forward to making this again!

Chicken and Noodle Casserole

Reviewed: Oct. 3, 2011
This is perfect comfort food for me. I've made it a half dozen times and the only thing I change is that I halve the salt and pepper. The amount of noodles is a preference thing, so just add them slowly, stir and judge for yourself. I probably use 3/4 of a bag, but it varies. I've made this for people in grief and/or recovering from surgery, and it's always a hit. Thanks!

Zucchini Saute

Reviewed: Jan. 1, 2014
I've long been a fan of sauteing zucchini and yellow squash in butter, but this fancies it up a bit for company. :-) I didn't use as much onion as suggested b/c of a guest's sensitive stomach, but the flavor was really good.

Holiday Chicken Salad

Reviewed: Dec. 6, 2013
Since first making this 6 years ago, I'm not allowed to make any other chicken salad. :) One thing I do differently is that I shred my chicken in a food processor instead of cubing it. We eat it on sandwiches, so it's just easier that way. I'm finally reviewing this because I just figured out why someone might think it's bland -- it depends on your seasoning salt. I've used Lawry's for years, but I recently bought McCormick's and it does NOT have the same flavor.

Beautiful Salad

Reviewed: Dec. 6, 2013
Thank you for this recipe! It's my go-to salad for special occasions now. Granted, I don't measure anything, and I serve it with whatever dressing we have on hand (Kraft's Bacon Ranch was awesome).

Cream of Pumpkin Soup

Reviewed: Jan. 6, 2013
This was wonderful! The croutons were an fantastic addition, so please don't skip them! Easy to do while you're simmering the soup. I always use low-sodium broth, so maybe that's why mine didn't seem salty? The flavor was perfectly good as written in the recipe (I might use just a touch less ginger next time but that's a personal preference). I did add just a little brown sugar (less than 1/8c) for just a little sweetness. Looking forward to the next batch!

Baked Vegetables I

Reviewed: Jan. 1, 2014
I love this as a take-along side dish because it's so easy. I really use whatever vegetables I have, but I always omit the potatoes because of how long they take to soften. I particularly like broccoli, mushrooms, carrots (which are still firm), onion, zucchini and grape tomatoes.

Glorified Hash Browns

Reviewed: Jan. 1, 2014
Pretty good and popular. Really complimented the ham I made. I used Ore-Ida's O'Brien potatoes, and because the package is less than 2 lbs, I think the proportion was a little off. I would have preferred more potatoes, so I'll have to think about how to make that work. Also, because I'm not a huge fan of cream of celery soup, I think I'll switch out 1 can of celery for mushroom. I used another reviewer's suggestion of using 1 plain cream cheese and 1 flavored which makes for a milder flavor overall and would allow me to experiment with other herbs.

Cheese Ball I

Reviewed: Dec. 6, 2013
Best and easiest appetizer ever, and it's always a hit! With absolutely no tweaking! People can't get enough of it. I've never tried to make it into an actual ball -- I just serve it in a pretty dish on a platter of crackers.

Super Sausage Gravy

Reviewed: Dec. 6, 2013
Love this! So easy. It does take a little longer to thicken, but that may be due to the low-fat milk. Someday maybe I'll try increasing flour or decreasing milk to see if that makes a difference.

Baked Fettucheesy

Reviewed: Dec. 6, 2013
I like this, but it's a little boring. The last time I made it, I intended to add chicken, but it wasn't defrosted in time. As far as being dry -- I would say it's more like a casserole than like a pasta sauce would get in a restaurant, and I'm okay with that.

Easy as advertised! I used one can of plain cheese and once nacho cheese for extra flavor. Will make again.

Slow Cooker Chicken and Dumplings

Reviewed: Jul. 29, 2010
Too doughy. I might try again with only one package of biscuits. Leftovers weren't very good -- mostly b/c of the dough.

Flatlander Chili

Reviewed: Dec. 5, 2009
REALLY GOOD FLAVOR, but it was a little on the thin side. Granted, I left out the beans, but I can't imagine they made that big a difference, especially considering I added macaroni.
