Double Layer Pumpkin Pie

I made this pie for our family holidays because my daughter is allergic to eggs. It was a hit with her and my husband. I personally found the pumpkin layer to be a bit heavy and strong-tasting, but maybe this is because I am such a big fan of custard-style pumpkin pies. We also made the crust homemade with graham cracker crumbs which is sooooo easy and tastes soooo much better than store bought. All in all, for an egg-free dessert is was great!

Nothing could be simpler or more delicious than this dish. It serves a ton of people and never fails to impress EVERYONE who tries it!

Colorful Spinach and Prosciutto Side

My family gives this dish 5 stars because the flavors are outstanding! We used leftovers to fill omlettes for breakfast - YUM! I really think the spinach could be doubled in this recipe and it would still be just as delicious.

Apple Filled Chicken in Pecan Creme Sauce

This is definitely an interesting dish. The first bite is shocking, but the more you eat the more you love it! The apple/shallot (or onion) filling was a bit too crunchy for our liking. If I make this dish again, I will sautee the apples and shallots before stuffing the breasts. Also, I agree with other reviewers that less sugar is better in the sauce. All in all, with a bit of revision, this could could make a very impressive meal for guests!

Frijoles a la Charra

The flavors in this dish are pretty good. We omitted the jalapenos to make it more kid friendly and it still came out well. The problem is that the beans just don't have enough time to cook. I would suggest cooking for 6 hours on low or 4 hours on high after the first hour on high.
